Instant Russian Tea

Eggplant -- Easy, Good and Tasty

I picked a fresh organic eggplant and tomatoes from my garden. My hubby refused to eat it (meat and tatters man) but i convinced him to just try one bite and he really liked it. I didn't have any bread to make crumbs so I used wheat crackers and it was fine. I left the skin on because when I was in Italy this summer that's the way they served their eggplant. I went with someone's suggestion of putting garlic in the egg and parmesan cheese in the crumbs. I will make this again. Thank you Lotting123 for the recipe and Wanda for the lovely picture!

Chili I

Excellent! The beer is a must and don't worry about the alcohol...it will evaporate while it cooks in just a few minutes. The last 5 minutes of cooking I added 1/2 chopped cilantro and the juice of 1 fresh lime. I served it with Chili Fritos brand corn chips, shredded chedder cheese, and a dollop of sour cream. My family and guests loved it!

Big Soft Ginger Cookies

Don't cha just love AllRecipes.com? YES!!! I agree guys and gals this recipe is a keeper. I made 3 batches for Christmas give-aways and everyone loved them. I took some to my Dad, who is in a nursing home, on Christmas day and he just couldn't get enough and was amazed that they were so soft.

Easy Sugar Cookies

EXCELLENT cookies and so easy...no rolling and cutting (although you could if you needed to). I added 1/4 tsp salt like a reviewer recommended. I used a small cookie scooper that has a lever to drop the dough onto the cookie sheet so my cookies were perfectly round. I bake them the full 10 minutes...8 minutes made them too doughy (depends on your altitude) After they cooled my daughter decorated them for Christmas give-aways. We made six batches of these delicious cookies!

Chocolate Pound Cake III

Very good. The only things I did different was to substitute the 1/4 c. hot water for 1/4 c. warm Maraschino juice and add 2 cups of halved Maraschinos. I also used another reviewer's recommendation of using almond extract instead of the vanilla. This didn't last the day in our house. Both my husband and teenagers absolutely loved it!!!

Pasta Puttanesca

This was a new experience for my "meat and Potato" husband. He really liked it and even had a second helping. I have fixed it without the anchovy paste but, I would highly recommend USING it because it seems to completes the dish. I have used a can of diced tomatoes in this recipe and it adds some moisture if you like it less dry.

Tarragon Chicken Salad II

This is a very good chicken salad recipe. Don't hesitate to use it. Next time I will only put 1 cup of Mayonnaise. I mixed in about 3/4 cup of the red onion because my children don't like onions and I added a handful (approximately 1/2 cup) of Dry Roasted Pine Nuts. I'll bet cashews would be good in it if you don't have the pine nuts. My kids loved it and didn't say anything about the onions. Wow...what an accomplishment!

Slow Cooker Taco Soup

Wonderfull slow-cooker recipe!! I doubled the recipe for my large family and substituted a pkg of chili seasoning for one the the taco seasonings. We love cilantro so I added a couple handfulls of it and the juice of 1 lime about 20 minutes before serving. I also substituted the canned chili beans with canned Great Northern beans because I needed to use them up. It is also really tasty without the sour cream, cheese and corn chips if you are watching your fat intake.
