Quinoa, Beet, and Arugula Salad

Like the ingredients but the vinegar was too overpowering for me. I made it exactly as the recipe stated. Next time will cut the vinegar in half and decrease the oil and sugar as well. Nuts would be a great addition to this. Very versatile!

Mahi Mahi y Mango Salsa

I only made the salsa and found it simple to make and sweet. A little too sweet for me so I suggest only adding 1 TBSP of brown sugar initially then adding more after the pineapple and mango have been added until it meets your preference. I served this with a white fish and it added flavor to a bland fish.

Great even with a gluten free flour blend. I recommend adjusting the amount of confectioner's sugar to accomodate how sweet you like the frosting. Excellent recipe!

Carrot Souffle

This was great and the whole family enjoyed it. I cut the butter and sugar in half. Used a gluten free flour and granulated cane sugar since it has a lower glycemic value. Could have cut back even more on the sugar and it would still be sweet. Thanks for sharing!

Simple Peanut Squash

Delicious, quick and easy. I found it took much longer to bake so I increased the temp to 400 for a quicker bake. Of course it all depends on how soft/firm you like your squash. Great recipe!

Excellent as written! Wonderful flavor and healthy too! My 2 year old declared "its delicious!". I ate it cold the next day with some chopped tomato and a bit of sour cream. Very versatile dish!

Fresh Strawberry Upside Down Cake

Easy delicious recipe! I made this with fresh picked strawberries I pulsed in the blender until there were just a few chunks left. Took it to the pool to have a dessert and topped it with whipped cream. Everyone asked for more!

Excellent! Used exact ingredients but found I didn't need to bake is as long as noted. Time could be cut by 5 - 10 minutes. This makes a really large loaf so I made it a second time and divided between 2 pans. PERFECT!!!

This was ok. The blend of flavors was good. I omitted the "dressing" because it did not emulsify when mixed. It was fine leaving it off (as it was too fattening anyway) and everyone could choose their own dressing to top it with.

Chantal's New York Cheesecake

This was good and easy, the whole family enjoyed it. Great texture too. I think you could cut back to only 3 packages of cream cheese - it ends up being about 2 1/2 inches high! I prefer mine a little sweeter so if you use all 4 packages of cream cheese then i suggest adding a topping like cherries or some other fruit filling.

Roasted Garlic Cauliflower

Wonderful! I only had 1 clove of garlic so I used that and substituted garlic powder for the remaining amount. I also used vegetable oil instead of olive (taste preference) and it was great. My boys (4 & 7) loved it too! Thanks for a great recipe for cooked cauliflower!

Parmesan Broccoli Balls

Delicious! I took previous advice and only used 1/2 cup of butter. I also used less onions. With less moisture to absorb I only had to let the combined mixture set in the fridge about 20 minutes before shaping into balls. Everyone enjoyed these!
