Amazing Italian Lemon Butter Chicken

Made this for friends. I doubled the recipe as one of my friends is a big eater and it doubled just fine! The tangy lemon and creamy butter flavour is a delightful combination. Served with a bread-dip app and some baby spinach salad and delicious pinot grigio for a fabulous evening together :)

Lemon Poppy Seed Bundt Cake

Love this cake. It's easy and inexpensive to make, comes out moist and light, and was a big hit with the family. I did what several reviews have suggested and used lemon pudding mix in place of vanilla, but otherwise made it according to the recipe here. Marvy!!

Meatloaf Muffins

I was tickled by the thought of making muffin-sized meatloaf bits for taking in lunches. Since I don't put bread into my meat (and since I'm allergic to tomatoes--used in the base of tinned vegetable soups and, obviously, ketchup) I necessarily modified the recipe. Instead of 2 lbs of beef, I used 1 lb of beef, 1 lb of pork; 3/4 c chopped onion; 2 large eggs; salt; pepper; thyme; about a tablespoon of Worcestershire sauce; and a handful of shredded Tex-Mex cheddar. It made 12 good-sized "muffins", and no greasiness (lean meat is your friend!) though I did have a fair bit of overflow as the meat cooked (just scraped it off the pan before it dried out). Great idea!!

Slow Cooker Beef Stew I

Like many people here I rate this one only four stars as it really does have to be tweaked to be more than basic. That said, on its own it's a terrific option for low-budget meals that go far--I filled my seven quart crock-pot before leaving for work and came home to a beautiful, thick stew that hadn't reduced a whole lot in volume. I did not brown the meat before putting it in (I don't have much time in the mornings before work); I did add more paprika, more black pepper, more garlic, and much more salt than called-for; as well I added some basil and some white wine. The meat is perfectly cooked, melt-in-your-mouth tender, and the vegetables are tasty and cooked but not mushy. As has been noted in previous reviews, even on low this stew needs only about 8-9 hours in the crock pot. Yum!

Apple Honey Bundt Cake

I needed something to serve for dessert with friends, one of whom is unable to have milk or soy. This cake not only did the trick, but it turned out fabulous. I used Pink Lady and Royal Gala apples for a blend that turned out to be perfect; the only thing I left out was the nuts. It's a beautiful moist cake, perfect for desserts or for coffee.
