Bake Sale Lemon Bars

DELICIOUS!!!! My husband was crazy over them... I doubled the crust and followed GOURMETMOMMY's suggestions but did make a few alterations. I did not use food coloring and they were still pretty. I am sure they could have been yellower but it worked. After juicing three lemons, I only had 3/4 C of lemon juice so I topped the juice off with Countrytime Lemonade. I was nervous, but it worked!!! And lastly, I baked them in the metal pan but lined it with parchment paper and they came out beautifully!!!! This recipe is deninitely a keeper!!! ***Note: With the alterations from GourmetMommy, I think the bars were tart (which I like) but if you are looking for a sweeter bar, the alterations may not be for you!!****

Candy Bar Brownies

The only reason I gave these three stars is because my mom and aunt (the queens of chocolate in their own minds) LOVED them. My mixture wasn't crumbly but I think it's because I used the whole can of condensed milk. My husband ate one of the snicker's bars I had intended on using so I threw in some peanut butter cups and an almond joy. Very very sweet. AVOID the urge to over bake. This is a dessert that will be better undercooked than overcooked. Wait until they are completely cooled to cut them, especially if the middle is still soft. Not my favorite, but as I said - other's loved it.

Big Soft Ginger Cookies

There is no way to describe how perfect these cookies are. Everyone who had them raved about them. I used orange juice as some other reviewers had suggested. I doubled the recipe and I do think I would have halved the cloves if they were for personal use, but I am not big on their flavor. I drizzled a mix of powdered sugar, milk and almond extract over them after they cooled. I will definitely be adding these to my holiday baking list!!!

Pumpkin Roll Cake

My mom and I make these every year. This is our exact recipe, but I do have a few suggestions to make this experience much better for you! Make them five at a time. One large can of PURE pumpkin is exactly enough for five rolls. Cook them on parchment paper but make sure you fold it right into the cookie sheet. When you pour the batter in, the folded paper helps to prevent the edges from burning. Wait until they cool completely and then spread the cream cheese frosting. Leave an inch around all four sides w/o frosting. it will spread when you roll it. Make them at least a day or two before you need them. When you have them rolled, wrap them as tight as you can get them in saran wrap. Even if they have cracked, the saran wrap will fix everything. After wrapping them put them directly into the refrigerator. I usually make 20 in one day near Thanksgiving and freeze them to give as small gifts over the holiday season. Not to mention that my husband then has access to them all year long!!!

Snickerdoodles V

Everytime anyone tries these cookies they are totally impressed and begging for the recipe. They're perfectly sweet and delicious. I usually use 1/2 cup butter and 1/2 cup shortening. I think the butter makes the cookie a little softer and it also adds a little extra richness. I have even added the cinnamon into the batter (an accident the first time) and they are delicious, but only if you like the flavor of cinnamon. It just makes the flavor a little more distinct. Definitely a keeper!

Peanut Butter Kiss Cookies

Not my favorite recipe for peanut butter cookies... I really missed the flour. The texture was really heavy and it was almost too sweet for my liking (words that rarely come out of my mouth!) I was looking for somethhing new to try out this year, but will definitely stick with the family recipe for PB cookies next time.
