Asian Salmon

This was easy and delicious. I doubled the marinade and added fresh ginger and a couple tablespoons of peanut oil. I also used honey instead of brown sugar. I marinated overnight, and before I stuck it in the oven I quartered some mushrooms and added them alongside the salmon, making sure that they got coated with the marinade. The mushrooms made a great side dish in one easy step!

Tasty Orange Chops

I love this recipe and have used it several times. Instead of orange juice concentrate I use the juice of two valencia oranges, and I love rosemary so I always add lots of it. I also make sure to marinate at least overnight.

Creamy Rice Pudding

This rice pudding is addicting! I turned it into coconut rice pudding by cooking the rice in coconut milk rather than water, and I left out the raisins. This recipe is also great with soy or rice milk, but I think it's best with whole milk.

Cream of Cauliflower Soup I

Easy, yummy soup. I left out the swiss cheese and was still very pleased with the consistency. Because I did not have thyme, I used tarragon and a blend of basil, chervil, and marjoram.

Cheesy Acorn Squash

This turned out great and it got lots of oohs and ahhs. I baked the squash halves at 350 until they gave easily to a fork (rather than microwaving).

Firecracker Grilled Alaska Salmon

I made this for a BBQ and it turned out great. I doubled the marinade, marinated overnight and used extra green onions. I will definitely make this again... After our BBQ I got a call from a guest saying that this was the best salmon he's ever had!

China Moon Salmon

I used white salmon and tripled the amount of ginger. Turned out great. I would recommend Imagine Foods' Organic Free Range Chicken Broth for lots of flavor.

Honey Crunch Pecan Pie

This is a great pecan pie!! The calorie count will probably scare some more health-conscious types, but for those who choose to indulge, this is perfect!! The crust is great and I've used it on a few other pies now.
