ViVi's Bacon and Tomato Soup

Reviewed: Apr. 2, 2013
I wanted to like this. I definitely love the idea of it. It had WAY too much beef stock. It didn't even taste like tomato soup. I am going to give tomato soup another try (I'll even add the bacon and elbow macaroni). This just wasn't for me.

It's Chili by George!!

Reviewed: Nov. 27, 2012
OMG, thank you George! This is the chili base that I have been looking for forever!!! I left out the kidney beans, pinto beans and bell pepper since I don't like them. I added noodles because I like those in my chili and it turned out great! I cooked it in the crock pot for about 8 hours and it was perfect -- wasn't runny at all! Love it and can't wait to make it again!

Lemon Blueberry Drop Scones

Reviewed: Jul. 17, 2011
These turned out really good. I didn't have any lemon zest so I omitted that. I made them so I could take them to work for breakfast all week. Yummy! Thanks for posting!

To Die For Fettuccine Alfredo

Reviewed: May 13, 2011
Be careful! This recipe calls for 3/4 of a PINT (1.5 cups) of heavy cream, not 3/4 of a CUP, which is what I thought. I had to add 1/2 cup of Half & Half because I didn't have any extra heavy cream. I took another reviewer's advice and added the lemon juice. Mine didn't thicken up but maybe that was the Half & Half or maybe I didn't cook it long enough (I get impatient), but it did taste really good. It was very salty (I used salted butter). I might put a little less salt in next time, and definitely the correct amount of cream. Overall, I thought it was really good for my first go round with alfredo (which I love). Thanks for the recipe, Erinmarie. I will definitely make again!

Baked Crumbled Chicken

Reviewed: Nov. 8, 2010
I made this for dinner last night and it was very tasty! I followed the recipe exactly and the results were very good. The only issue I had is that the coating on the bottom was a little soggy, but it still tasted great. I liked that it was crunchy and the spices made it taste so good! I will definitely make this again! I only used two chicken breasts instead of a cut up fryer chicken, but that was the only substitute. Thanks for the great recipe!

Great Pumpkin Dessert

Reviewed: Nov. 8, 2010
This turned out just ok for me. The bottom layer was very mushy...it did not set up even after over an hour in the oven. If I had left it in longer, the topping would have been burnt. The flavor was good, especially the topping. I was somewhat underwhelmed.

Cake Balls

Reviewed: Oct. 26, 2010
These are delicious! Every year I make them and people go wild! I also swear that I am not going to make them the next year, but I always do. My favorite flavor is strawberry cake and strawberry icing...it is so delicious with vanilla candy coating! These are great to make ahead -- you can freeze them and thaw as needed. You must get a candy dipper -- it makes dipping the cake balls so much easier!!! Enjoy! They are phenomenal!

Butter Roast Chicken

Reviewed: Oct. 25, 2010
I cheated on this recipe a little bit. I moved the temperature to 375 degrees and baked for an hour. The butter burned and got all gross, but the chicken was fine. It was juicy and very flavorful. I will definitely cook this again and follow the baking instructions (I ran out of time). I had a sorority dinner and the girls loved it!

Freezer Caramel Drizzle Pie

Reviewed: Aug. 2, 2010
I'm pretty disappointed with this pie. I followed some of the reviewer suggestions which were helpful, but it just doesn't taste like much of anything. About all I can say is that it's rich. I won't be making this again.

Fruit Ball

Reviewed: Jul. 23, 2010
My mom used to make this for cookouts and church gatherings and it is so good! You can substitue the almonds for pecans, which is how my mom's recipe was, but either way it is yummy!

Mixture for Meatballs, Meatloaf or Burgers

Reviewed: Jul. 9, 2010
This did not work well for burgers on the grill. It was too mushy and the meat just fell through the grate. I also wasn't that pleased with the taste. All of the ingredients sound like they would make a tasty burger, but it just didn't work for me.

Mom's Pumpkin Pie

Reviewed: Nov. 16, 2008
My mom and dad love Chudleigh's pumpkin pie. I was unable to get that pie for Thanksgiving this year, so I went on the search for a reasonable facsimile, and this worked out perfectly! It is enough for two pies. I just bought the frozen pie crusts and they were really good. The other thing I did was buy canned pumpkin puree. It really is unnecessary to puree the pumpkin yourself. Instead of using four different spices, I used 2 1/2 teaspoons of Pumpkin Pie Spice and it was really good. This will save you money, since spices are expensive. All in all, I am really pleased with the recipe and found that you can do a very semi - homemade version that is cheaper and just as tasty as Chudleigh's!
