Baked Leeks

Only use the white/light green parts of the leek. Split in half lengthwise, then cut into 2 inch rounds. Sliced potatoes au gratin style (2) and added halved romas, about 10. Didn't have cheddar, so used mozzarella and a tiny bit of mexican cheese. Made bread crumbs out of one hoagie roll, and added that to the top. Looks delish, and am waiting now for it to cook.

Chicken and Biscuit Casserole

Great recipe! I halved everything but the veggies, and it was perfect for two. Left out the peas, and added about 1/4cup of milk, as I was a little short on broth. It was very flavorful, and loved the fact there were no canned products.

Wasabi Mashed Potatoes

This recipe has a kick if you ADD more of everything! For 2 servings, I used: 1 T wasabi powder; 1/3 cup butter; 2 t. minced garlic; 1/4 - 1/2 c. milk; no water. Makes it nice and creamy and spicy. YUM.

Elegant Penne with Asparagus and Shrimp

Incredibly easy and super-tasty! I added mushrooms with te asparagus and another dash of red pepper flakes at the very end before serving, which kicked it up a notch. Served with a nice green side salad, and it was perfect!

Party Mimosa

I quadrupled the recipe for all the juices and made in one pitcher, then let everyone add their own champagne. Float a few raspberries in the glass and this was a hit!!!!

Cooked for 30 minutes, then threw the blueberries on for another 15 minutes. It turned out fantastic! Even better was I made a praline topping for it. Yummy!

Cowboy Mashed Potatoes

Wow, these are super crazy fun! They pop in your mouth and like my husband said, they are spicy! I made several modifications due to what I had on hand. Used 4-5 small yellow potatoes, cubed, 10 sliced japalenos from a jar, 2 tsp. minced garlic, and 5 oz. baby carrots. Put in 2.5 TB of butter, and about 1/2 cup shredded cheese. Next time (and there will be a next time!) I think I might try adding cream corn to give it that creamy mash potato texture.

Quick Chicken with Asparagus and Provolone

Easy and delicious. Next time, I will decrease the time asparagus cooks, 10 minutes or less, and place cheese on top at last minute or two of cooking. Also, would suggest low-sodium broth, as it seemed really salty.

Cottage Cheese Chicken Enchiladas

modified it a bit based on what I had available. 1) used 2 c. leftover rotisserie chicken 2) mixed chicken with sauteed onions and can green chilies and splash of green enchilada sauce and 1/2 t. cumin 3) left out taco seasoning mix 4) warmed tortillas in oven instead of oil 5) used mexican blend cheese 6) used green enchilada sauce...they turned out delicious! the cream cheese/sour cream mixture is phenomenal.

Mongolian Beef

Had to substitute the sherry (who has that anyways?). Not sure if that's the key or not, but it was too vinegary and was missing that nice brown sauciness you get from real Chinese food.

Easy Baked Tilapia

This was my first time using Old Bay seasoning (I had a sample packet). With the garlic salt added, this was way TOO salty. Plus with the lemon juice and the vegetables, my fish was slightly soggy.

Turkey Bake with Whole Wheat Pasta

I used a large can of sauce - 26.5 oz, and it still was dry. Plus, very bland even though I added extra garlic and italian seasoning in the meat. I won't make this again.

Fresh Tomato Pie

Made this twice. The first time I made the following alterations based on previous reviewers: dice onions and tomatoes; saute onions with garlic; add italian seasoning to mayo; sprinkle cheese on pie crust first. While incredibly delicious, the presentation was less than stellar - it was runny. The next day however, it had congealed and was again delicious, but not too pretty. I made it again for a friend who recenlty had a baby and added spinach on the bottom in an effort to "soak up" the moisture. I'm not sure how it turned out aesthetically, but they seemed to have loved it. Will definitely make this again!

Blue Cheese and Pear Tartlets

I've been making these for several years now - they are always requested for parties! Like other reviewers, Gorgonzola or any similar cheese works great! I've also used milk when I didn't have any cream.

Pork Chops for the Slow Cooker

I took others advice and only cooked on low for 3 hours - they still came out extremely dry. Next time I will shorten it to 1.5 hours. The sauce was awesome though! I added a 1/4 cup of honey and served over rice.
