Brie and Cranberry Pizza

Such a delicious and fancy appetizer. I burned the crust a little but it was still delicious. Next time I'll reduce the cook time or keep a better eye on it.

Yum! I can't handle all the dairy in heavy cream so I substituted soy milk. It turned out great. I'm sure the original recipe would be even more decadent though!

Apple Crisp II

Delicious but a bit sweet for my taste. I may have not used enough apples. Either way I'll be making it again with less sugar! Also, eating the leftovers on top of oatmeal for breakfast = yummy!!

Baked Spaghetti Squash Lasagna Style

This was exceptional! I included no-boil lasagna noodles because I like carbs ;) It was delicious and perfect and I will make this over and over again. Might throw in some crumbled sage sausage next time for the carnivorous boyfriend.

Baked Spaghetti Squash with Beef and Veggies

Yumness!! My boyfriend won't eat weird vegetables and so I had to find a way to trick him into eating spaghetti squash. This worked! I used chicken instead of beef and made half of it meatless for me. It was great! Also, I only used about 1/3 of the squash so if using a whole squash add more tomatoes!

Zucchini and Potato Bake

OOOOhhhh sooo goooood. I used cornmeal instead of bread crumbs but this was still amazing. I also added little chunks of tofu for protein since I'm vegetarian. LOVED it!

Apricot Lentil Soup

I love this dish. I've made it exactly following the recipe and another time I made it with pre-cooked lentils that I had. Both times it was very good. I love it served with grilled cheese smeared with sweet chutney or toasted bread with apricot preserves. Yum!

Curried Hummus

This was my first time making hummus and I kind of winged it. I made a few changes to the recipe so this isn't quite a fair review. First, I was almost out of curry powder so I used 1t curry and 2t cumin (too much cumin even though i love it). Also i followed other user's suggestions and used 1/4c liquid from the beans which was perfect. Anymore liquid would have been too much. Really different, and good though. I'll try it again!!

Vegetarian Tortilla Soup

SOOO good! I would have given it the full 5 stars but it was way too spicy (and I only added a 7 ounce can of green chilis). I would recommend one 4 ounce can of green chilis and about 2 -2 1/2 T of cumin. I also crushed up some tortilla chips and added them at the very end because I like my tortilla soup to be thick. I topped it with lime, cheese and sour cream (to help with the spiciness).

Cilantro Tomato Corn Salad

It was a good base but not amazing. I felt like there was too much butter but that may just be my personal taste. I also added lemon juice. I will make it again but alter it a bit...but I think that is the point. I ended up mixing it into the pasta and zucchini that I had made and it was really good like that. It's a great start for a fun side dish that can be altered as needed.

Homemade Black Bean Veggie Burgers

Well I ended up with black bean mush instead of burgers. I think my mistake was mixing the recipe with tips from other reviewers. Otherwise the taste was good and i liked the idea. While BBQ-ing, the burgers just fell apart but I cooked it anyways and put in into a pita which made a really yummy sandwhich.
