Apple, Cranberry, and Pear Crisp

Great recipe! Substituted half of the oil with apple sauce and it was still delicious. The cranberries are a great addition to the crisp--I forgot to add any cinnamon or spices and it was still really tasty. Will be making this again very soon!!

Faken (Veggie Bacon)

These were delicious. My vegan boyfriend is a big skeptic of tofu that's "pretending" to be meat, but he was surprised by how good it was. I used Wildwood tofu, which is super firm and comes in a vacuum sealed package, rather than a box and it was perfect for it! Next time I'll have to try it with the liquid smoke. I also think I'll up the saltiness and decrease the sweet to make it more how I like bacon. Thanks for the recipe!

Banana Oat Muffins

This recipe was AWESOME. I loved the texture, moist but light. Many banana muffins I've made come out too wet or dense. I baked these for exactly 20 mins and they're nicely crispy on top--not hard. Only thing I added is walnuts, which I think is a must.

Oatmeal Raisin Cookies IX

These were great! I halved the recipe for a trial run, but I wish I had made more. I subbed half the oil for applesauce and added a few more tbsps of oatmeal. They are nice and soft inside and since I baked them a few mins extra, they're crunchy on top. They are not crumbly, dry, or cakey. I love that these are so much healthier than other recipes I've seen and they still taste awesome!

Millet Muffins

These muffins were delicious! Light and fluffy, not dense the way whole wheat muffins often are, with the perfect amount of sweetness. I ate one with dinner dipping it in soup (had no bread on hand), then later spread some jam in the middle and ate another as dessert! I second guessed the recipe and added a few more shakes of flour b/c I thought it looked too liquidy, but it actually would have been fine--I actually wish mine were a tad more moist. Instead of buttermilk, I used 1 c. soy milk + 1 tsp of apple cider vinegar (you let it sit and curdle for a few mins). Egg replacer works great as well, so these are easily made vegan. I also used 1/4 c. applesauce and 1/4 c. of oil to make it healthier. Next time I'm gonna up the millet content, but these were awesome--thanks for the great recipe!
