Chili I

Excellent Chili recipe. I have made this twice already this winter and I am making it again tonight. I think I have tweaked it to my liking pretty well so this third time should be great. Some things I have noticed. The coffee flavor is quite strong. I used a Starbucks dark roast the first time, and the coffee flavor was a bit strong for my liking. I switched to a milder brew the second time and liked it much better. The spiciness level depends a lot on what peppers you use. I used two Jalapenos and some Serrano and the flavor was a bit mild for my taste. I think I could add a Habernero or two and call it good. I have also found that a little Sriracha goes really well in this Chili. I don't really like traditional Chili Beans, so I put a lot of Black Beans in mine, and it works well. Lastly, I do this crock pot style and it turns out great. For anyone who is looking to get more adventurous with their Chili, this is a fantastic recipe to do so. It's easily tweakable to your tastes and it's pretty solid right out of the gate.

Lemony Garlic Shrimp with Pasta

I'll start by saying I think I messed this one up a bit. I put in way too much pepper. But by the end of the meal I was kinda glad I did. I kept trying to imagine the dish with less pepper and I just didn't see it having much flavor. Even though I did screw up, I don't think I would make this again. I am still giving this 3 stars though, just because I feel it is unfair or me to score it too low since I made a mistake

Traci's Chicken Noodle Casserole

We will definitely make this again! Plus, there is no need to let it sit overnight! This is a great base hot dish recipe. I made changes but the overall idea of the dish remained the same. I sauteed the onions with the diced chicken. Then I cooked the Macaroni noodles, and mixed them with 1 can of Cream of Celery soup, 1 can of Cream of Chicken soup and the 2 cups Milk. Then stirred in the Chicken, Onions and Cheese. Instead of using processed cheese, I used a package of Cheddar Monterey Jack mixed cheese crumbles. I also took the recommendation of someone else and put some french fried onions on top. The flavor of this made the way I did was not very strong. If you are worried about a strong Onion flavor, don't be (I used two small yellow onions). It was very mild. The strongest onion flavor came from the Crispy Onions on top. It turned out much like a fantastic Mac & Cheese with Chicken in it. I will try again with other modifications as well. I think adding some color by throwing in some Peas or Broccoli would be a good idea. Easy, tasty, and easily modifiable make this a near perfect recipe.

Sweet, Sticky and Spicy Chicken

Fantastic! There seems to be some people here that say this is not sweet or sticky. The way I made it, it was definitely both. I tossed the chicken in a flour/pepper/garlic/paprika mix, and some excess flour ended up in the pan. I think the excess flour helped the sauce to thicken better. I doubled the sauce, as recommended by others (a definite MUST!), with the exception of the hot sauce. I cut that back because of what some other people here recommended. I felt that it was not spicy enough this way (but I like pretty spicy food). When I make it again, I will add a little crushed red pepper or a little extra hot sauce. I served this over white rice with steamed broccoli on the side. Overall, it's an absolutely amazing meal. Especially since it is soooo easy to make. I will definitely be making this over and over again. YUMMY!

Burgundy Pork Tenderloin

This was very average for me and my wife. The gravy ended up a little too tangy for my taste, and the onions seemed to conflict with the gravy. I added mushrooms for the wife, and she seemed to like those. I served it with some cubed red potatoes and those were tasty. Overall the dish was not BAD.. but it certainly was not GREAT either. I will probably make it again... but I may have to make a few minor adjustments to suit my taste.

Baked Macaroni and Cheese III

This was okay. It was a little bland, and not quite creamy enough for my taste. I think it would be great with some tweaking... but as it is, it's just an average Mac+Cheese.

Barbecue Chicken Casserole

This isn't really much of a casserole. It's more like chicken swimming in BBQ sauce with a few veggies thrown in. The taste is just all BBQ. This was a good dish, but it's almost overwhelming. I would perfer if it had a little more complexity other than just straight BBQ sauce...

15-Minute Herbed Chicken

This is definitely not the most fantastic meal you will ever eat.... but if you need something to eat in a real short time, this is a pretty good choice. It's super easy to prepare and the flavor was solid. I butterflied a few chicken breasts and seasoned them with Salt Pepper and Garlic, and then I followed the recipe exactly after that. It really is as easy to make as the recipe sounds... from start to finish it took 15 minutes at the most. If you need something quick, tasty, and family friendly, this is a good meal for you. Cheers!

Laura's Quick Slow Cooker Turkey Chili

Solid recipie. I followed the suggestions of some other folks and added a can of corn and some water. I also omitted some of the beans because I don't care for them. I went with two cans of black beans and that was it. I also left out the Cumin and the All Spice. I added green chiles too. I did not use ground turkey, but cubed up turkey breast instead. It turned out pretty great. The wife didn't seem to like it as much, so that is why it only gets 4 stars.

Southern Pulled Pork

This is great pulled pork. I used just a little bit more liquid smoke than the recipie called for, and I added a few tsps of BBQ sauce into the mix. Other than that I followed the recipie exactly. The pork was juicy and tender and very flavorful even before the addition of BBQ sauce on top. Easy to make, and very tasty! 5 stars!

Pepperoni Casserole

This is a solid recipie. It's very lasagne-esque and pretty dang tasty. I only changed a few little things. I used ground beef seasoned with rosemary and Salt, Pepper, Garlic instead of the sausage (I think it would be better with spicy italian sausage though). I also added a little shredded Parmesean cheese to the Cottage Cheese/Mozz mix. I kept everything else the same as the recipie described. My only real complaint about the recipie is that there was not enough sauce. I useed a 12 oz. jar of sauce and it was still not enough. I would recommend at lease 18 oz. of sauce for this recipie unless you like the noodles a little on the dry side. Other than that, it's pretty a pretty great hot dish. Especially for cheese lovers like me and my wife.

Chicken Cordon Bleu I

First off, I made a lot of changes... First I took the chicken breast and butteflied it (and tenderized it a little) then seasoned both sides with some Salt, Pepper, and Garlic Powder. Then I laid a slice of Black Forrest Ham and a slice and a half of Swiss Cheese on top of the Chicken, rolled it up and put the toothpicks in to hold it together. Then I dipped the chicken in an Egg Wash and coated them with a generous coat of Panko Breading (with a few dashes of Black Pepper and a Tsp or so of Paprika mixed in with the Panko). I baked at 350 for a little over an hour, and added a slice of Swiss on top after the breading was already crispy. I served this with Garlic Mashed Red Potatoes. The meal turned out fantastic. My Wife and I both enjoyed it very much. If you want a little extra crunch to this recipe go with the Panko Breading. It was great. If I would make any other changes I would add more cheese inside and probably a little more ham too. Definitely worth a try!!

Baby Back Ribs

Awesome. Super easy to make and sooo tender. I seasoned the ribs with some salt/perrper/garlic, and basted them with Stubbs BBQ Sauce. I also threw in a few baked potatoes when I put the ribs in the oven and they cooked perfectly. The timing was perfect for the potatoes and the ribs to be finished at the same time. Super easy to make, and very tasty.

Caramelized-Onion Pork

Pretty dang good! The wife loved it. I thought it was pretty good, but I feel it could have been better. If you make the carmelized onions how they are described in the recipie they turn out really dry. I served it with potatoes that I thew in the pan along with the meat and onions. I will probably make this again at some point, but when I do I will modifiy how I cook the onions. As is, it's still a pretty solid meal though.

Braised Balsamic Chicken

Pretty good meal. The wife did not like it a lot, but said it was "okay". I thought the flavor was good, but if you do not like balsamic vinegar STAY AWAY. It was very tangy. I served it with some balsamic veggies (potatoes, red peppers and carrots), and I placed the chicken over some white rice. I give it 4 stars.. but the wife probably would have given it 3. Definitely not for everyone.

Spicy Peach-Glazed Pork Chops

This was a pretty tasty dish. The sauce was really good. I couldn't find any "chile paste" at my grocer, so I just got some hatch green chiles and blended them into a pulp. I wanted to thicken up the sauce in the pan after the pork was fully cooked, so I put in some corn starch to try and thicken it up. That was a mistake. Just leave the sauce as is and you will be fine. I wasn't sure what to use as a side so I served it with a Broc/Carrot/Corn mix. It was also pretty simple to make, and it's fairly healthy. I would probably make this again. Not quite a 5* dish... I would give 4.5 if I could, but I can't so it gets 4*'s.

Szechwan Shrimp

Great! I made a few changes though. I doubled the sauce like everyone else suggested, only I put it a little less ketchup and a little more soy sauce. I also used Low Sodium soy sauce instead of the regular stuff. I also added about 1/4 teaspoon of Honey to kick up the sweetness. It ended up being a perfect balance between sweet and spicy. I tossed in some Broc/Corn/Red Pep veggie mix for color and texture, and I served it over some instant Asian Rice. The wife really liked it as well, so we will definitely make this again. Remember to ease up on the ketchup a little bit if you are worried about the ketchup taste coming out too much.
