Pumpkin Chili

I was surprised by how much I liked this! I made the recipe almost exactly as written, but I made it vegetarian by leaving out the beef and putting 1 cup extra beans in the blender with 1 cup of the tomato juice and then adding it to the chili. This gives it a slightly meaty texture. I think I'll use less tomato next time, though. It's a bit too much with the diced tomatoes AND the juice.

Mini Cheesecakes III

So perfect! I did the recipe exactly as written, except I used butter for the crust. The only thing I did differently was to make them TRULY mini, meaning a mere inch in diameter. I baked them in paper liners for 14 minutes and they are the perfect consistency. By the way, I'm not a fan of cheesecake.

Fudgy Brownies I

This was my first attempt at baking brownies, though I bake all the time. I followed the recipe exactly, though I accidentally used a little more cocoa powder than stated. These were exactly how I like my brownies. Gooey on the inside, flaky and a little crispy on the outside. I'm very pleased. :)

Tzatziki I

Too much garlic in my opinion, but other than that it was very tasty. I used non-fat yogurt which made it a little extra tangy, which I really like. Thanks for the recipe!

Homemade Black Bean Veggie Burgers

Awesome! Used less onion (cuz too much hurts my tummy), used red bell pepper, used 8 saltine crackers instead of bread crumbs, and made sure to strain the onion/pepper/garlic mixture. Cooked 'em up on the stove and YUM!!

Black Bean Vegetable Soup

Pretty good! Made it exactly as written, though next time I think I'll change it up. One cup less veg stock, less onion (personal preference), add celery like others said, but really that's it. I found it very tasty!

Cream Cheese Frosting II

I want to give it 4 1/2 stars since I changed it up. Only used 1 package cream cheese, 1/4 cup butter, used 1 1/2 teaspoons vanilla and 2 cups of the powdered sugar. It turned out wonderfully.

Cake Mixes from Scratch and Variations

Made the chocolate recipe and got 72 mini cupcakes. Used 1/3 cup instead of 1/4 cup cocoa powder, but I shouldn't have because I also added 1 cup mini chocolate chips and it was a little much. Did as another reviewer said and used oil instead of shortening, but only because I don't like using shortening. Topped it off with a cream cheese frosting and it was perfection!

Pumpkin Spice Cupcakes

I never give 5 stars. Soooo good! Like others, I added some pumpkin (1/2 cup more) but the rest was exactly the same. I put 2 tsp. black food coloring into the frosting and ended up with 72 perfect Halloween mini muffins.

Cracked Sugar Cookies I

Did it all as written, though like another reviewer, when I was mixing it I just dug in with my hands and kneaded it like bread dough. I dipped the tops of the balls into a Halloween sprinkle mix and they turned out kind of cute. Took them to a rehearsal with me and they were highly praised and gone in minutes.

Tomatillo Guacamole

Meh. I would actually like to taste the avocado. Maybe one less tomatillo would suit my taste better. I also only used two tomatos, because 3 just seemed too much. Other than that, I liked it with the red pepper flakes.

Harvest Salad

Soooo good. It gets requested for every family gathering. Left out the onions, halved the dressing (but used extra jam), and used feta instead of blue cheese. It's pretty darn good if you add in green apples. Heaven!
