Strawberries and Cream Trifle

This recipe is BEST! when you use fresh whipped cream instead of Cool Whip. Basic yellow cake, baked , cooled and cubed. Instead of Angel Food which is very sweet and has no texture. And topped with a few toasted sliced almonds.

Thin Mint Crackers

Wow!! I used Chocolate Wafer Cookies and dipped them in melted Bittersweet Chocolate and I added one teaspoon of peppermint extract. I used the cold cookie sheet lined with waxed paper. Refrigerate! These are delicious and better than GS Thin Mint Cookies.

Easy OREO Truffles

Excellent!! I used the food processor to crush the cookies to make a nice fine crumble. Once I mixed in the cream cheese I refrigerated the cookie mix for about 30 minutes, rolled them in balls and refrigerated again before dripping them into a mixture of melted milk&white chocolate. Then rolled then into chopped walnuts (used food processor). A-ma-zing!

Kettle Corn

I just finished making this recipe minutes ago. The three kernels test is a good way to start the first batch. I placed the oil in the pan, then the popcorn. Once the oil starts to sizzle then, sprinkle the sugar over the popcorn. Leave as much of the top of the pot open as possible and use the 3 seconds on, 3 seconds off the fire rule. FANTASTIC!!

Grilled Fish Tacos with Chipotle-Lime Dressing

These are so delicious!! I made these while camping. I grilled the fish and served on corn tortillas with shredded green cabbage and that incredible Chipotle-Lime sauce.

Spinach Stuffed Chicken Breasts

I'm rating this 4 stars because I did make a few changes. After pounding out the chicken breast I seasoned the chicken with a bit of salt, pepper and onion powder. I used Kale because I did not have spinach. This dish has so much flavor, very good and easy breezy to make. Don't forget to put it under the broiler for about five minutes to crisp up the bacon in the end. Delicious!! Thank you :o)

Marinated Pork Tenderloin

This is the Best Pork tendrloin that I have ever had. The flavor is unbeatable. I followed the instruction on grilling unchanged and covered it with foil (as one reviewed suggested)to rest. It was sooo juicy and tender. I marinated the pork for a few days which flavored the pork throughly. D'lish!! Thank you :o)

Saltine Toffee Cookies

Very easy to make and very hard to mess up. I made one batch with milk chocolate and pecan. Another with dark chocolate and almonds. Please toast your nuts before topping your toffee, it is soooo..GOOD!! Thanks for the recipe :o)
