Italian Chicken Skillet

My husband made this last night and it was excellent! He doubled the garlic and added some chopped red and green peppers. The smell as it was cooking was mouth-watering and the taste was even better. We will definitely make this again, and best of all, it is a great "starter" recipe that can be used in so many different ways:)

Baked Dijon Salmon

This recipe is fantastic! We use it when we have dinner guests. It always turns out perfect and gets rave reviews from everyone! To others: don't change a thing in the recipe and try marinating the salmon for a few hours in the honey dijon mixture. Yum! BTW: The same recipe (but for 6 fillets) is on this site as "Alaska Salmon Bake with Pecan Crunch Coating" but we find both recipes turn out just as good with Atlantic salmon, which we prefer.

Mango Sorbet

Great recipe! I was making 3 different recipes at once and forgot the lime juice in the sorbet. It was really good anyway. Next time, I will cut the simple syrup to 3/4 cup as the mangos were quite sweet on their own.

Pineapple Fried Quinoa

We didn't expect much from this recipe, as quinoa doesn't have a lot of flavour on its own but has my hubby said "It was the surprise star of the meal!". Everything worked well together and even after a day in the fridge, the quinoa didn't get all dried out like rice sometimes does. We would serve this to guests!

Plum Buckle

Made this withfresh plums that had to be used up. OMG it was delicious! I served it warm with a bit of whipped cream on the side. This is definitely a keeper!

Caribbean Fish With Mango Salsa

Very good recipe - good enough for guests! For the salss, I added 1 seeded and chopped jalapeno pepper and it added a bit of heat that we like. Very fresh tasting and the fish pan-fried (without oil) to a nice golden colour. Yum!
