Quinoa Vegetable Soup

I have a daughter home sick today and she wanted chicken noodle soup. She's gluten intolerant, so I used this recipe as a starting point for a gluten free chicken soup. It turned out great. I'm giving it four stars only because I made so many changes that its hard to rate the original soup. But, the base was a perfect starting point. I started by boiling two chicken breasts in the chicken broth and shredding them into pieces. Then I followed the recipe with the following changes: I didn't have celery, peppers, tomatoes, cabbage or parsley on hand - so I skipped them. But, I added the shredded chicken and one can of large butter beans (rinsed) for more texture. I used Mrs. Dash Chicken Grill Seasonings to kick it up as it simmered. (two-three shakes). It turned out to be a great gluten free soup for a picky teenager with a cold! Thanks for the base to start with... I'll be using it again! The end result was a Added

Grandma's Corn Chowder

Excellent - even my teenage son, who was badmouthing it before he tasted it, had two bowls! In fact we ALL did! I made just a couple tweeks: * Used chicken broth for water - as many have suggested. * Added 2 T. butter * Used 1% milk (that's why I added the butter) *Accidently dumped too much pepper in, but, the end result was a nice peppery/spicey kick. Will do that again! Easy and a good dinner with crusty bread and a salad!

Butternut Squash and Turkey Chili

This was very, very good. I served it at a football gathering as a healthier alternative to the regular chili - those who chose it, loved it! I made a couple small tweeks to make it more picky teen friendly - After the browning of the turkey, I added just the spices (including the addition of 1/2 T allspice) and simmered for maybe 5-10 minutes, this made the turkey meat look like ground beef. I also chopped the butternut into more like 1/2 - 3/4 inch chunks. Very good!

Crispy Orange Beef

I doubled this recipe for my family of four - following the recipe exact. I wanted leftovers for lunch the next day....well, I had to beg for them to leave leftovers. They ate 3/4's of it and were still licking the plate. Great recipe - tonight I'm going to try the sauce as a glaze for green beans as a side to chicken. It's a great sauce! As a warning to messy cooks, my kitchen was a disaster from the frying (which I rarely do). I had grease splatters EVERYWHERE - maybe I fried it on a temp too high , plus I wasn't using a wok, just a frying pan.

Chocolate Pretzel Rings

Frito Lay's ROLD GOLD brand makes Holiday Rings (round pretzels) for anyone having a hard time finding round pretzels. If you are having trouble finding the round pretzels in your area, go to: http://www.fritolay.com/our-snacks/find-a-snack.htm Select ROLD GOLD, then Holiday Rings, then your zipcode and Frito Lay will give you stores carrying them within 50 miles! I have only ever been able to find them during the Thanksgiving/Christmas hholiday time. I just bought my first bags yesterday in MN. My M-I-L can't find them in the PHX area (and a search per above showed no stores carrying them in the PHX area), so I will be carefully taking a couple bags to her at Thanksgiving as they are a special hit among her friends. So make lots during the holidays and freeze them for all year long! They freeze great. Hope this helps! Enjoy!
