Turkey Veggie Meatloaf Cups

I prepared these last night and they were great. The only things I changed was subsituting 1/2 c. seasoned bread crumbs for the couscous and adding 1 tsp. of chopped garlic. They were great and I have a few left for lunch today.

Breakfast Casserole

A co-worker brought this in as a treat for the office this morning (Thank you Mark!) It was a real hit with the group. I will be making it for our New Year's brunch.

Marinated Ranch Broiled Chicken

Very simple, very tasty recipe. I mixed the marinate ingredients in a zip lock bag and added 12 boneless, skinless chicken thighs. This was much, much more than the 2 breasts originally called for but the marinate goes a long way. Placed bag in the refrigerator and shook it up when I remembered it. Six hours later, placed the chicken on a hot grill for 8 minutes each side. It was wonderful.

Buttermilk Salad

Very easy to make, can be modified by type of gelatin and the addition of nuts. Even folks who express their hate for buttermilk will be singing a new tune when they eat this light, fluffy, cloud of a sidedish/dessert.

Texas Lizzies

I am re-reviewing this recipe as I needed to make them again. I followed the recipe exactly except somehow all of the "Jack Daniels" at my house went missing. I searched through the liquor cabinet and the only rum I had was a bottle of hot cinnamon rum and it did not sound like it would work. I had some brandy, Seagrams 7 and Crown Royal (but not enough of any of them to use without mixing). I sniffed everything I had left and settled on Southern Comfort. I soaked the raisins as directed and proceeded with making the cookies. I cannot believe I like them better. Since I am taking them to a wake, I am calling them "Comfort Cookies".

Hearty Ham Loaves

I had a lot of left over ham so I thought this sounded good. I ground the ham (not an easy task when you don't have a meat grinder) and prepared the recipe exactly as written. After all that effort, I had made "SPAM". Every one of my family thought it tasted exactly like the canned stuff with a sweet glaze on it. I don't think I will try this one again. I guess it would be okay if you liked Spam but it is much easier to pop open a can.

Chicken or Turkey Tetrazzini Deluxe

Following others suggestions, I left out the water but added a little extra chicken broth. Left out the bell pepper and mushrooms, substitued Mexican 4-cheese for the cheddar and Italian 4-cheese for the paramsan. This was out of necessity, not preference as I was tired after the holiday and did not want to go to the store. It was golden and bubbly when it came out of the oven but the pasta quickly sucked up the liquid leaving it a little dry. Even dry, this was fantastic. I had it for lunch and dinner yesterday and breakfast this morning. My husband has been out of town and due back any minutes so I am sure there won't be any left for me once he gets the first bite. Great recipe!!

Oven Fried Chicken IV

Started preparing everything and found that my corn flakes were stale. I found a package of wavy parmasan pretzels and crushed them up to use in place of the corn flakes, otherwise followed the recipe. I made extra so I would have something for lunches and while that was a good idea, it did not work because we ended up fighting for the last piece. I can't believe we ate the whole thing...
