Ricotta Spaghetti

Super bland, but after adding a whole lot of garlic (I fried it in some olive oil first) and fresh basil, it was alright. I put a spoonful of sun-dried tomato pesto over it and served it along side of a super-rich entree, and the light taste complimented the meal well. 2 stars because the recipe leaves much to be desired when prepared as-is.

Sangria by the Pros

I like this recipe. It was very tasty. The fruit was a bit chunky for me. I ended up draining the finished brew and adding fresh fruit to the cocktails I served for presentation.

Easy Meatloaf

This is so easy to make, and it tastes delicious!! I took the other users' suggestions and used seasoned bread crumbs. I also like to add some rooster sauce to the ketchup blend to give it a little kick. If my husband is too hungry to wait out the baking time, I'll make 4 mini meatloaves instead.. then it only takes about 30 minutes to bake. Great recipe!

This is such a low stress recipe, and we never have left overs!! I use the chicken for sandwiches, baked potatoes, or even salads.

Tequila Shrimp

This was so easy and turned out great! I did make a few changes though. I followed the advice in the reviews and only used half of the tequila that the recipe calls for. I substituted Corona for the other half. I also added the juice of one lime and marinated the shrimp in this mixture for about an hour. I cooked the shrimp and garlic in the butter and then added the marinade with cilantro, salt, pepper, and a good helping of chili powder for the last two minutes of cooking. Wow, it was off the hook! We ate it over garlic buttered pasta and my husband licked the plate :) This recipe is also good because it gives you an excuse to buy tequila. And beer. We'll definitely do this recipe again the next time we want shrimp!

Cheesy Catfish Chowder

Boy howdy, this is a great recipe! My husband loves fishing, and he's always bringing home catfish. I'm so glad that we have a new recipe for it! I made a few modifications.. instead of celery salt and salt, I used Tony Chachere's. Also, I'm watching my diet right now, so I cut the potatoes and carrots and added zucchini and squash instead. I tried it without cheese and it was delicious, but with cheese is definitely better! This one is a keeper!
