Fluffy White Frosting

I was making a coconut cake for Easter and I went back and forth between a butter cream and a fluffy white. I found several recipes for fluffy white and one actually called for 1 1/2 Cups of sugar!!! This has 1 Cup and it was perfect.

Sopapilla Cheesecake Pie

I have made it twice now and it is one of our families favorite recipes. I took it to work and it was gone almost instantly! I followed it true to the recipe and it was perfect. Some reviews recommend 3 pkgs of cream cheese but I think it would be too much filling. But you MUST drizzle the honey as it adds such nice flavor. I find it hard to find the crescent sheets BUT I did find a new crescent roll package (Pillsbury) that makes larger crescent rolls - it's a 12 oz package VS. an 8 oz and I will use that from now on as I like the added crust volume. No need to roll out the dough, just pat the triangles into the pan - one can for the bottom and one for the top and with the larger size can just tear any of the extra dough into pieces and just randomly place it around on top of the dough layers.

Blueberry Coffee Cake

Giving it one star is generous although like a fool I followed some tips from others and added the cream cheese to the egg, sugar,butter. And unfortunately I doubled the recipe because people raved about it - now I can throw out a 13 x 9 in pan of it instead of an 8 x 8 pan. If you try it - make it AS DIRECTED. I MIGHT give it another try to see if it comes out better following the directions.

Pecan Turtle Bars

It is definitely a candy. I followed the advice about doubling the flour. I upped the butter/sugar layer too. I also increased the choc chips but shoudln't have, it made that top choc layer too chick - for me. I would also use milk chips next time. I guess I kind of wish the bars were a little thicker. If the pan were smaller then you might not need to increase everything. I might experiment with that the next time.

Spaghetti Carbonara II

My mom - who is not the greatest cook (sorry Mom) kept saying that she wanted to make me dinner on my birthday, so I said Spaghetti Carbonara as it is something I love but make it rarely (?) I had used this recipe before with success so I gave it to her, she was nervous since she had never even eaten it before and did not know what to expect. It was AWESOME, defnitely seconds and empty plates all around. It's a great recipe too since you can do the bacon thing ahead of time , throw it together in minutes. Love It!

Cinnamon Cookies II

This is one of our new favorite cookies! Like others I omitted the molasses - leave that for ginger snaps - But I felt compelled to substitute something in its place so I used honey. The dough was sticky but I chilled a bit and formed it into two logs and chilled until firm. I sliced it into 1/4" thick slices then layed one side in a cinnamon/sugar mixture. Baked for 9 min. They did spread out to a thin but wonderfully crisp/chewy cookie - LOVE THEM!

Dutch Apple Pie with Oatmeal Streusel

Absolutely the best apple pie ever!!! In the past my apple pies were a hit and miss, sometimes too watery. The only thing I did per a couple of other reviews was to add a bit more flour and some tapioca to ensure that it wasn't too watery. It is an awesome pie - Thanks

Pistachio Cream Cheese Fingers

Hmmm...Taking some tips from other reviews I added chopped pistachios and added some green color to the dough. Taking the time to make "fingers" (Living in the Pacific Northwest the shape in the photos looks kind of like a slug) I rolled in a ball and flattened slightly. I melted white chocolate and frosted them with that. I'm not a good "drizzler" My husband and I just don't know if they have enough flavor actually. I will see how they taste after they sit for awhile, with some cookies are a bit more flavorful given a little time. We'll see.

Soft Oatmeal Cookies

I followed it exactly and they were good. I did chill the dough a bit and did not flatten them. I thought the temp at 375 was going to be too high so I did them at 350. They came out pretty flat. I have used the recipe on the oatmeal container for awhile and I thought I would seek out something new/better. The one person that said the dough was dry did something wrong as the dough was very moist/wettish. I think I would prefer an oatmeal cookie to be slightly "thicker"

White Brownies

I took the advice of the others and added a little more milk. They also did need a little more time to cook. But mine look just like the picture - taste delish. Super easy to make. As far as not being able to spread the batter out - Two words - OFFSET SPATULA! Wet with hot water and dry and you can spread it very easily. As far as not being able to get it out of the pan - I line my pan with foil whenever the recipe allows. Easy to cut and nothing much to clean up

Raspberry Almond Coffeecake

Like some other reviews suggested - I doubled the recipe too, The only small things I changed was making it using 1 tsp of vanilla and 1 tsp almond extract, otherwise I did not alter it in any way. While the batter was thick it was no problem spreading the bottom layer with an offset spatula. Then sort of drop blobs onto the top and you will see it more or less cover it. I did make the powdered sugar glaze adding a little almond extract. Super yummy

Butternut and Acorn Squash Soup

Loved it - super easy and I too reduced the cream cheese and the sugar. I didn't add any other different seasonings because I wanted to try it first without. I will make it again for sure
