Cinnamon Coffee Cake II

I substituted a Hodgson Mill's gluten free cake mix and it was delicious! Trying now with chocolate and cheesecake pudding mixes to see what that tastes like.

Grandpa's Beef, Mushroom, and Barley Soup

I made some changes-I cooked stew meat in the crock pot with a package of brown gravy mix and 2 cups of water. Once that was about done, I cooked quick barley (1cup) according to the package directions. I put the barley, parsley, salt, etc all in the crock pot with the meat to finish for about an hour.

Black Bean Brownies

This is pretty good. It's best eaten within 24 hours, when the cucumbers are still crisp. If you liked it when your mom put vinegar over cucumbers when you were little, you'll find this even better.

Peach Pie

I had to cook the pie about 20 minutes longer before the crust browned up some. It was delicious fresh out of the oven. After it cooled, though, it was quite thick and a little too dry. One thing I might try is cooking the filling on the stove top until it gets a little thick and to experiment with flavoring-you can keep adding spices and tasting this way. It's a little cheat trick of mine. Then pour it into the crust while hot and bake until the crust is done. I think the hot filling will help the crust cook faster and probably not over bake the filling making it so thick after it cools.

Oatmeal Raisin Cookies IV

Very good. I just mixed as directed, with cold butter fresh from the refrigerator, baked for about 7-8 minutes and let cool quite a bit before removing from my baking stones. Inbetween batches, I kept the dough in the refrigerator to keep it cold. They turned out delicious.

Baked Omelet Roll

Dry and thick. I wonder if omitting the flour would be better and maybe adding a little milk. I just like my eggs more moist. I will try this next time.
