I do not think it's fair to rate this recipe as written because I followed the advice of other reviewers and changed the recipe a bit. I reduced the sugar and used 1/2 c. white and 1/2 c. brown, substituted 1/2 cup unsweetened applesauce for 1/2 cup of margarine and used 1/2 c. butter instead of margarine. I also used 3 Tbls of fresh-brewed strong coffee as I do not have any instant. Just before baking, I added a mix of chocolate chips and crushed pecans to the top of the muffins. They were delicious! Moist and tasty. The coffee flavor was mild, to say the least, but still a tasty recipe. Again, I cannot comment on the recipe as written, but with the suggestions mentioned, this recipe is a keeper!
