Cream Cheese Sugar Cookies

Reviewed: Dec. 27, 2010
Finally found my tried and true sugar cookie recipe. I made the first batch exactly as written and found the dough very hard to roll. The second time, I refrigerated for 1 hour and found it was much easier to manipulate. Instead of using flour to prevent from sticking I used powdered sugar which helps the taste.

Chocolate Chip Breakfast Cookies

Reviewed: Sep. 19, 2010
I like those packaged ones on my drive to work in the morning, but these are so much better. Added some hazelnuts for some texture and added 1/4 more wheat flour. Thanks for the recipe!

Banana Bread

Reviewed: Aug. 26, 2010
Haven't had banana bread in years, and this was as good as I remembered. I substituted half the white sugar with brown, added 1 tsp vanilla, and 1/2 tsp cinnamon.. I think if I use this recipe again, I will include an extra banana for more flavor.

Homemade Refrigerator Pickles

Reviewed: Aug. 22, 2011
Very good but too sweet and I even reduced the sugar by half a cup. I added some crushed black pepper and a pinch of dill weed. Next time, will use only one cup of sugar.

Zucchini Bread IV

Reviewed: Jul. 7, 2010
This recipe is good or better than grandma's. The amount of cinnamon and vanilla I think is the key. I tried to make it healthier because of my husband's cholesterol. Here is what worked for me: 1/2 cup applesauce, 1/2 cup oil, 1 1/2 cups sugar, 1/2 cup of wheat flour in place of white. My husband didn't even notice the lighter changes!

Taffy Apple Salad I

Reviewed: Oct. 17, 2009
Was apprehensive to use vinegar in this recipe, but somehow it worked. Put a dash of cinnamon and salt in the sauce, which made it better in my opinion. Only used about 4 oz of whipped topping. This was a fun recipe.

Zucchini Parmigiana

Reviewed: Jul. 12, 2010
This is very refreshing. I didn't coat the zucchini because I was in a bit of a hurry and it still tasted great.

Egg Noodles

Reviewed: Oct. 26, 2011
This is a classic noodle recipe... thick and al dente when you boil them. I doubled my batch so I would have plenty of leftovers. I used two boxes of chicken stock and a can of cream of chicken to thicken. My husband loved these.

Fresh Strawberry Pie I

Reviewed: Jun. 20, 2011
This is a perfect end to any cookout. I smashed about six strawberries and had them cook with the cornstarch, which added a nice flavor. Next time will slice the strawberries, because it was almost impossible to eat with a fork.

Quick Quiche

Reviewed: May 14, 2011
Don't get me wrong, this quiche had a wonderful flavor. I baked it ten minutes longer than written and the eggs didn't seem to set up. Next time, I will add 1 cup of milk and see if that works better.

My Amish Friend's Caramel Corn

Reviewed: Feb. 26, 2011
This caramel corn is to die for! Make sure you only boil caramel for five minutes though. I thought it looked too runny and cooked it for six minutes, so mine was a little bit chewy. It keeps fresh in a ziplock bag for at least five days... well that's how long it lasted in my house.

Sangria! Sangria!

Reviewed: Oct. 17, 2009
Was trying to find an intersting drink to serve at my wedding. Adapted a bit and made berry sangria instead. Added frozen strawberry and raspberry juice. Then, put in some berry arbor mist with rose wine. Diluted it with strawberry sparkling water. Put some frozen strawberries and raspberries for an added touch. Anyone that gets married requests my berry sangria!

Downeast Maine Pumpkin Bread

Reviewed: Oct. 26, 2011
Very moist and delicious pumpkin bread. Added 1/2 tsp additional cinnamon and 1/2 tsp of allspice. Drizzled with a homemade vanilla glaze. The quality is like what you would find in a bakery.

Classic Waffles

Reviewed: Feb. 26, 2011
These waffles are so light and flavorful. Please don't skip the step of warming the milk it is a way to incorporate all the ingredients without overmixing. If I have fresh lemon I like to add the zest to the batter for more flavor and I always add about 3 tbsp more sugar.

Playgroup Granola Bars

Reviewed: Oct. 4, 2010
These turned out very nicely for my first attempt. I added chocolate chips to the mix which was a nice addition. Seemed like it was missing something, so I will try adding some peanut butter and m&ms next time.

Creamy Dill Cucumbers

Reviewed: Jul. 19, 2010
This was the closest thing I could find to my grandma's cucumber salad. She never added the milk or ranch dressing though. I didn't peel my cucumbers and wish now that I had. Overall, a good recipe.

Dumplings

Reviewed: Oct. 18, 2009
These are just like grandma's. Very tender and have a wonderful flavor. I like to roll mine about a quarter of an inch thick and use a pizza cutter to cut into 1 inch squares.

Cherry Limeade I

This was a very good recipe. Used Cherry 7-up in place of lemon-lime soda. Also added a few drops of red food color to brighten it up.

Delicious Ham and Potato Soup

Reviewed: Jan. 4, 2009
This soup is amazing! Perfect consistency and flavor. Used three cubes of chicken bullion because that is what I had on hand, which worked great. Will use this method for all future cream-based soups.

Chicken Enchiladas

Reviewed: Oct. 9, 2011
This is a good recipe base, but I made a few changes. Omitted the refried beans, chicken soup, and sour cream. Added a few more chicken breasts and cooked with taco seasoning and cherry tomatoes from the garden. After rolling tortillas I always toast them in a hot skillet a few minutes before baking.
