Teena's Overnight Southern Buttermilk Biscuits

Reviewed: Jun. 29, 2011
These biscuits really plumped up! I added some baking powder as others suggested, and used milk that was one day beyond it's expiration date. The result was a fluffy, flavorful biscuit. These biscuits were delicious!

Arrachera (Skirt Steak Taco Filling)

Reviewed: Aug. 23, 2010
This is a delicious and versatile dish. If I don't have skirt steak on hand, I will use ground beef, sweet onion, 1 cube of cilantro bouillon, and a squeeze of lime juice and cook in a lightly buttered skillet until all ingredients are cooked thoroughly. I soften the corn tortillas in hot oil and serve with fresh cut cilantro, lime, salsa, and tomatoes. Leftovers are hard to come by.

Egg Drop Soup I

Reviewed: Jul. 24, 2010
Salty!! I used two cubes of Knorr chicken bouillon since they are equivalent to 2 cups of chicken broth and the soup came out way too salty. I'm glad I didn't throw in 4 cubes. Next time I'll use 1 Knorr bouillon per 4 cups water and see how it comes out.

Easy Pizza Sauce III

Reviewed: Jul. 2, 2010
I made two batches of this recipe. One, I went exactly by the recipe and the other one I obtained from DEED330's post. I have to say, when going by the recipe, the sauce seemed to lack something. It was tasteless. I then went by DEED330's suggestion and added the additional ingredients and it was superb!

Quick and Easy Pizza Crust

Reviewed: Jul. 2, 2010
This was a super quick and easy recipe. I feel it could use additional spices as the finished product came out a bit on the bland side. The texture was nice, chewy and when reheated in the microwave, the crust remained moist.

Pecan Pie V

Reviewed: Jul. 2, 2010
This pie was delicious! I used whole pecans to top the pie prior to cooking so it could mask the filmy top layer that reviewers speak of. It took a little longer to bake than the recipe called for and once I noticed the crust was brown, I immediately covered the pie with foil and continued baking until the center was done.

Fresh Strawberry Upside Down Cake

Reviewed: Jul. 2, 2010
This cake was way too sweet! I used fresh strawberries and followed the recipe without alterations. I do not recommend using 6 oz of strawberry gelatin! The gelatin gave the strawberries a fruit roll-up type texture and the sugar from the gelatin along with the marshmallows was over powering with sweetness. Not even whipped cream could save this recipe. I gave it 3 stars since my co-workers ate most of it, but I feel they were just being polite.

Seared Ahi Tuna Steaks

Reviewed: Jun. 3, 2010
I went ahead and followed other reviewers advice and toned down the salt to just a pinch per steak. I also coated the steaks with white and black sesame seed mixed with the cayenne and course black pepper. Once the white sesame seeds turned golden, my ahi was done. I served with a side of soy sauce and a lemon wedge. It was divine!

Carrot Broccoli Casserole

Reviewed: Jun. 3, 2010
I was overwhelmed by the grease from the butter and cheese. It was too much for me. Next time I'll taper it down so I can taste the vegetables.

Refried Beans Without the Refry

Reviewed: Jun. 3, 2010
I used to boil the beans with pork salt and/or bacon in an olla. After I tried this recipe, I converted to this healthier alternative. My mother said the beans had a nice, spicy kick and was surprised how flavorful they were despite no pork additives.

Fast and Friendly Meatballs

Reviewed: Jun. 3, 2010
I used 85/15 ground turkey and they came out soft on the exterior, despite leaving them in the oven for an additional 10 minutes. Perhaps I should of tried using 93/7 ground turkey. Other than that little mishap, these meatballs were tasty!

Norwegian Butter Cookies

Reviewed: Jun. 3, 2010
These cookies are similar to Nabisco's Butter Cookies, but are softer and melt right in your mouth. The only change I made was baking them for a little under 10 minutes to prevent the bottom from burning. The dough was easy to work with. My father said it reminded him of his grandmother's cookies. Success!

Pizza Pinwheels

Reviewed: Apr. 24, 2010
So yummy! I used Pillsbury Place n' Bake rounds since they are already pre-cut. I unrolled them, added shredded mozzarella and pepperoni slices. Once I rolled them up, I topped them off with more mozzarella and a dash of pizza seasoning. They were served with a side of Marie's Jalapeno Ranch dressing. My boyfriend gobbled them up!

Philly Cheesesteak Sandwich with Garlic Mayo

Reviewed: Apr. 19, 2010
Tasty! I used thin sliced ribeye instead of the round steak called for. I added some Tony Chachare's seasoning in the AM and let the steak sit in the fridge until preparation time. I also added a dash of course black pepper. This is a wonderful, diverse recipe.

Slow-Cooker Chicken Tortilla Soup

Reviewed: Apr. 1, 2010
This is a very good tortilla soup recipe. I've made it with the slow cooker, as well as the stove top and it comes out delicious every time. I serve with a side of tortilla chips, sour cream, Monterrey jack cheese, limes, and avocado cubes. Even my finicky mother loves this recipe! :)
