Apple Crisp

Reviewed: Sep. 16, 2014
86 the margarine. Use 2/3 c melted butter instead. Granny Smith apples or Fuji apples usually work best. Place apples in greased pan. In a bowl mix dry ingredients with egg to make crumbly topping, pour over apples evenly. Add melted butter, drizzled over top. Sprinkle with cinnamon. Best if NOT refrigerated a after cooking, even if it sits overnight (makes crumbles chewy).

Easy Sugar Cookies

Reviewed: Dec. 20, 2011
Came out a little dry, but were pretty good. Made sure my butter was nice and soft, as I have always found that to be the trick with sugar cookies. But all in all, I'd use it again ... maybe adding 1 TB of butter more.

Buttermilk Pancakes II

Totally a favorite in our family! Sometimes we add a tablespoon of vanilla or almond extract, but the classic recipe is awesome as is!

Glazed Corned Beef

Reviewed: May 1, 2011
This was good. Cooked the corned beef in my crock pot and then moved to oven for 30 minutes with glaze, as per other directions. Did add some carrots and potatoes and they were jazzed up by the glaze. I'll save the recipe and pull out in March for a bit o' the Irish in our menu.

Orange Monkey Bread

Reviewed: Dec. 21, 2009
This is AMAZING!!! We made it and had no leftovers for breakfast on Thanksgiving and it has been requested for Christmas! I did have to extend the cooking time, but it was no big deal.

Sicilian Meat Roll

Reviewed: Nov. 13, 2008
I omitted the tomato juice and instead served it drizzled with a marinara sauce and liked it much better that way. It was a HUGE family hit, kids and adults alike and will find its way to our table many times in the future, I'm sure!

Slow-Cooker Chicken Tortilla Soup

Reviewed: Oct. 30, 2008
I started with frozen chicken and shredded it after about three and half hours to save a step. I also added a box of 'dirty rice' to it. It came out more like a stew, and was one of my most popular dishes so far! Definitely a repeat recipe!!
