Scored Potatoes

What an easy way to make a different type of baked potato. I changed the parsley to dill and as always, added garlic (we love our garlic here), and a small pinch of coarse sea salt. Basting with olive oil instead of the butter, was a healthier choice that kept the potatoes equally moist.

Restaurant-Style Buffalo Chicken Wings

Married to a Buffalo native, I was a bit skeptical that anything could compare to the "original" Buffalo wings. These turned out to be a great at-home alternative for wing night!!! I followed the recipe exactly and we opted to cook them in a turkey deep fryer, we use outside. I prefer this to indoor frying as there is no "fried food" smell lingering in the house, and it's quicker & less messy. They are great wings and we have served them at parties here many times. I usually play with recipes and put my own spin on things, but this is a keeper just as it is!

Apple Hermits

This is a great cookie full of healthy ingredients. I gave it 4 stars only because I made some revisions to it. I omitted cloves as that amount seemed too strong for a mellow, fruity cookie. I also added wheat flour for a healthier choice. Then added cherry flavored craisins for a touch of flavor to match the apple. I then had to cheat a bit because I was craving a bit of sweet...I added white chocolate chips and that a nice touch to compliment the tartness of the apples and craisins. Perfect for back to school lunches!!

Candy Corn Bark

This was an easy recipe for my kids to make by themselves for their holiday parties at school. We added salted peanuts for a bit more crunch and the salty/sweet combo was delicious!!! This will be a definite "make again" recipe.

Italian Cheese Stuffed Pork Chops

This was a great option for pork chops! I followed the recipe to a "T"; only omitting the suggestion to brown the chops first. Simply, I was running low on time and wanted to bake quickly. They turned out moist, tender, and flavored nicely! I hadn't tried cutting a slot in the chop to stuff it before, only making a stuffed chop by folding it around the stuffing and securing with a toothpick. This was a thicker, heartier option!!! Will certainly try this again!

Zucchini Brownies

Hesitantly, I made these brownies per my daughter's request. I assumed they'd be cake-y and I prefer fudge-y brownies. Well, to my pleasant surprise, these were thick, rich, and very moist! Sneaking in some zucchini made them an even better choice for desserts. The zucchini wasn't noticeable to my younger daughter! The only change I made was to use Hershey's Special Dark baking cocoa. I love dark chocolate and this added to the richness. Maybe next time I will throw in a few dark chocolate chips or even some peanut butter ones. EXCELLENT!!! I will hang on to this recipe and make again!

Buffalo Style Chicken Pizza

Tilapia Pitas

This was excellent! In fact the spicy mayo was so good, we have made a bowl full and used it for different sandwich/burger recipes! I couldn't find anything but white pitas, so opted for the 100 calorie, 12 grain thin buns. I also shredded fresh spinach as a healthier choice, than the lettuce. What a great light meal for steamy hot days!!t

Delilah's Frosted Cut-Out Sugar Cookies

I was really pleased with the flavor and consistency of this dough. I followed the recipe to a "T", and they turned out wonderful. I was impressed with the fact they were firm but not stiff or crumbly. I have had other recipes in which the cut-out shapes are so puffy after baking you can't tell what they are. I used these on an intricately designed snowflake cutter, and they looked exactly like they did before baking. This recipe is a keeper to me!!!

Banana Oat Bars

This was a super-fast recipe and didn't leave me with many bowls or pans for cleaning up either. I omitted the raisins and added a couple teaspoons of crunchy peanut butter, as another reviewer had. I love the flavor but the consistency was average. Moist enough, but almost rubbery. Not sure what made this happen; but will try the recipe again. My kids were enthusiastic about a baked good for breakfast as well!!!

Peanut Butter Cup Cookies

These were so easy to make! The ingredients were items I had on hand and it went together quickly and didn't use many pans/bowls, so clean up was a breeze too. The cups were nice and gooey, which was a wonderful taste. These disappeared just as quickly too. lol!

Broiled Tilapia Parmesan

What a quick and simple way to serve a healthy meal. I added finely chopped spinach and didn't have a lot of Parmesan, so I opted for some mozzarella as well. It was a bit more creamy (and added extra fat of course) but admittedly; IT WAS GREAT!!! The kids loved this and it was the quickest fish recipe I have tried yet!

Spaghetti Pie III

This was an absolute "HIT" at my house tonight! It was easy to make, easy to clean up after, and flavorful. My husband likes more of the add-ins in his spaghetti, so next time I will add mushrooms, more green pepper, sun dried tomatoes, and maybe some sausage or pepperoni chunks. He gave this a "10" as it was made per recipe today though!!!

Green Cake

This was so ESAY to make and a great addiion to my daughter's St. Patrick's day feast at school. The pistachio was actually quite mild and the pineapple added a nice texture to the whipped topping. I added green food coloring to the topping to make it really green and a couple drops throughout the batter as well. Good choice this holiday!

Jalapeno Popper Chicken

Okay, I have yet to try a recipe from this site I haven't enjoyed making and eating! This recipe was no different! IT WAS OUTSTANDING! We are partial to spicier foods, so I added extra doses of Jalapeno peppers, plus added paprika, black pepper and crushed red pepper to the bread crumb coating. I also opted to bake it instead of the pan fry. It was cheesy and spicy spilling from the moistest chicken! My kids had seconds and my husband thought this would be a hit at his fall football gathering! I made it again for my parents who don't eat the peppers, substituting mushrooms and asparagus tips with the cheeses, and garlic salt and mustard seed in the coating. Great alternative. A recipe I will for sure be making again!!!

Chicken Noodle Casserole

This was a delicious "comfort" casserole for a winter's day. I added sage and extra garlic, cut out the salt and savory. It was great tasting.......however, an awful lot of work for chicken/noodle casserole. Something I wouldn't have wanted to start when pressed for time! Will try again though

Jumbo Fluffy Walnut Apple Muffins

Very nice texture; airy, not thick or heavy! They were plenty moist too. I used Granny Smith apples were a bit tart, so I threw in a cup of white chocolate chips and that added a nice bit of sweetness they needed. Great recipe I'm sharing at a family reunion tomorrow and I will use again for the teacher's tea before Thanksgiving!!!
