Pumpkin Spice Bread

Excellent. Moist and tasty. The taste of ginger comes through. Made half the recipe in four small loaf pans. Used part squash and part pumpkin because I had some leftover cooked squash. Would give this one 6 stars if I could.

Banana Muffins I

When I followed the recipe properly these were great. The first time I made them I blew it on the sour cream and put in a cup instead of 1/4 cup. They were like banana Yorkshire puddings. A little humility doesn't hurt and reminds me to read recipes more carefully. Bottom line, the recipe as is, is a keeper.

Aunt Betty's Blueberry Muffins

These were good but a little on the dry side. I normally don't use butter on muffins but these needed a little since they were dry. If I can figure out a way to make them more moist, I'd make them on a regular basis.

Lemonade Chicken

I read the reviews before making this recipe. Since I made changes I'm rating it 4 stars. Sauteed chicken that was dredged in flour. Added 1 tsp. garlic powder to the liquid part. Added some big chunks of green pepper and onion to the mix. About an hour before it was done I added some fresh pineapple in chunks. End result was five starts but since I made the changes don't feel it's fair to give it a full five. Definitely going to make again. Very easy and end results tasty.

Rhubarb Cheesecake Dream Bars

Took this to work for a shared lunch. Lots and lots of compliments and requests for the recipe. I doubled the shortbread base and made it in a 9x13 pan. Middle 2 layers were the same amount as in recipe. Had to double the sour cream layer. Bottom line is that this was a huge hit so I'll make it again. No doubt about it being 5 stars.

Aunt Norma's Rhubarb Muffins

These muffins turned out great. I increased the rhubarb to 2 cups based on comments from others but would still be 5 stars with 1.5 cups. When I make muffins they always turn out flat or just rounded a bit. Always disappointing. Did some searching for a solution and think I've found it. I greased only the bottom of the muffin cups and half way up the side. What a difference. Best looking muffins I've ever made. Definitely making these again especially with rhubarb in season now.

Oven Roasted Red Potatoes

Delicious and easy. This cooking method brought out the flavour of the potatoes. I used small red potates so the cooking time was shorter. Baked on a small baking sheet covered with foil. Made for easy clean up. Made these twice this week and will be a regular at our house. Lots of compliments.

Chocolate Sauce

Top rating because this is a keeper and had lots of compliments. I adapted it a bit - used milk rather than water and added about 1 Tbsp. of butter. Definitely make this in advance and let it sit. Had some children over and had them make their own sundaes. This sauce and a choice of sprinkles, whipped cream and cherries for toppers. Kids had lots of fun. Had them make the sundaes for the adults too.

Whole Wheat Refrigerator Rolls

These were beyond a five start rating. Easy to make, really light and tasty, will definitely make again. The combo of flour that I used was 3 whole wheat to 3.5 white. Just perfect.

Moroccan Meat Cigars

This recipe rates a 5 because I will definitely make these again. Could be kicked up a bit as far as spices go but people's tastes vary so I still give this five stars. Quite easy but worth doubling the recipe. Might as well make more when you're at it. Even doubling would be good for only three people.

Roasted Pork Loin

Have cooked for many years and was told that this was the best roast of pork I have ever cooked. Definitely will use this recipe again. Didn't have any white wine so just made regular gravy. The garlic made it very flavourful. Wine would have made it that much better. Used a meat thermometer, removed roast from oven at 160 degrees and let it sit about 20 minutes. Was really moist. Cold leftovers have been tasty too.

Toffee Chocolate Chip Cookies

Made a few changes just to do something differernt for Christmas but still rate this recipe a 5 for sure. Batter cooks up beautifully. I added chunks of white chocolate, chopped walnuts and dried cranberries rather than the chocolate chips and brickly chips. These would be good with the addition of anything along these lines, e.g. Smarties. Will keep this as my basic cookie recipe.

Peanut Butter Marshmallow Squares

These are really sweet but there's a time and place for something really sweet. When I make these again I'll use a square pan rather than a 9 x13 pan so that they'll be thicker. That's the only suggestion that I have. Like others, I omitted the nuts and coconut but that's a personal preference thing. Probably would be good wtih the nuts and coconut too but I'm not big on coconut. These square are great for sweet indulgene at Christmas time.

Apple Rhubarb Crumble

When the comment at the table is, "this is good enough for company" the recipe is way up there in the ratings. I like a topping with oatmeal so added oats but aside from that I followed the recipe. Served warm with a little good quality French vanilla ice cream... Yum! Lots of good comments around the table about this recipe.

Salmon with Lemon and Dill

Easy, delicious, quick. Can't ask for better than that. Followed some suggestions made by other reviewers; a little less lemon and a little less dill. Lots of compliments and a recipe I'll use again. This review is amazing considering I've always said that I don't like salmon. I do now!

Potato Leek Soup I

Easy and tasty. I didn't weigh the potatoes and likely used more like 2-3 lbs. so the proportion of leeks to potatoes was slightly different than in the recipe. Very yummy. No need for salt and pepper. Was very flavourful as it was.
