Vegetarian Stuffed Peppers

Raspberry Chocolate Bars

This was pretty good. To start off I halved the recipe, which would have made 24. I ended up with 12 bars, using an 8x8 pan which worked great. Based on other reviews, that's what I was hoping for. I wouldn't recommend sweetening the berries. The crust and the chocolate make it awfully sweet. I think the tartness from the raspberry is necessary. I added some Grand Marnier to the filling, not a lot, but next time I think I'll try it in the crust. I didn't find the crust overly crumbly (although, like I would with a pie crust, I worked it with my fingers until it looked like small crumbs). The gooey-ness of the raspberry didn't bother me, either. I will definitely make this again. Tastes great and it's very simple.

Lentil Cakes (Patties)

These are really great (not to mention healthy). I didn't have grape nuts, but crushed bran flakes worked just fine. These patties can be spiced however you like them, just throw in whatever sounds good and experiment.

Spicy Oatmeal Cookies

These cookies are great. I upped the spices a little, as suggested by other reviewers, and scaled back on the sugar (they're plenty sweet). I only used one small banana because I didn't want it to overpower the other flavors. I added chopped walnuts and dried cranberries for run. Oh, and a tsp. of vanilla. They're delicious, I'll make them again.

Fresh Pear Crisp

Yummy! Because I think pears are pretty sweet anyway, I decreased the sugar in the recipe by almost half--that's my personal taste, though, and maybe not for everyone. I also threw a handful of dried cranberries in the filling and a handful of chopped cashews in the topping just for fun. The cashews, especially, were delicious. I will def. make this again. It was great topped with home-made whipped cream!

Fresh Peach Cobbler I

I found this way too sweet, although it doesn't seem to be a problem anyone else had. I used frozen peaches and butter instead of shortening. I will make this again, but I will scale back the sugar considerably.

Zucchini with Chickpea and Mushroom Stuffing

The flavors were nice, but the recipe is missing something. Not sure if I'll make it again. If I did, I'd try pureeing some of the mixture, and either add cheese over the tomato sauce or try it with a curry sauce instead.

Basic Flaky Pie Crust

This was great. I used butter instead of shortening. It was definitely flaky. I used mine for a quiche and it worked great, and next time I make a pie this is the crust I'll use.

Lemon Square Bars

Delicious! I like my lemon bars to be very lemony and a little tangy, so I added about a tsp of rind in the crust and a tbs in the filling. It was perfection.

Artichoke Spinach Lasagna

I used about 20% less cheese 30% less broth, and it was delicious. My tomato sauce was almost a paste, so I scaled back on that a little too. I also replaced the mozzarella with ricotta. Didn't have any artichokes so I skipped that part. Next time I make this I will add some zucchini.

Garlic Vegetable Soup

This was delicious! I used vegetable broth to make it vegetarian, added lentils, leeks, an onion and three extra whole garlic cloves and 2 bay leaves. I didn't have enough canned tomatoes so I also used fresh. My husband ate his soup with a little fresh lemon squeezed into it.

Awesome Egg Salad with a Kick

Delicious, not too much mayonnaise. I subbed plain kefir for the sour cream and added celery. I also left out the bacon bits to keep it veg. Salad was great with a little bit of vinegar.
