INCREDIBLE Raspberry Cheesecake Cookies

I made these as instructed except could not find the raspberry chips, so substituted white chocolate chips that I mixed a 1 tsp raspberry extract into then let sit while I mixed up the dough. Unfortunately I found them to have a very strong "box mix" taste. I did not enjoy much at all. They also turned out much flatter then pictured. 2 - I made these to include in my Christmas cookie & candy assortment. Every Christmas I make 16 to 18 assortments of sweet treats and give out as gifts to over 25 people. I also bring some to my fellow employees (20 +). I received mixed reviews. Most said they were just "Iffy" or "ok", but there was a small group who absolutely loved them. Thus the 3 star rating. I know the reason for using the mix is for ease, but if dough was made from scratch I believe this would be a fabulous cookie across the board! It has potencial.

Juicy Thanksgiving Turkey

Giving this 5 stars even though mine came out a bit dry. This was do to my own mistake. I roasted in my Nesco roaster vs tenting and roasting in oven. The turkey tested done over 1 1/2 hours sooner then what roaster directions stated, and I was a bit worried my meat themometer was not reading correct temp of meat. So I decided to cook it an additional hour. Should not have done that. The tase was great, through! Made wonderful gravy from drippings. Will definitely make this again and not cook as long.

Cranberry Sauce Extraordinaire

I've been searching for years for a really good cranberry sauce from scratch. One that is not to bitter. This is it! this was a huge hit at our Thanksgiving this year! It does make quite a lot, but I pre-froze portions and then put in vacuum sealed freezer bags. My pear unfortunately went bad so had to improvise and used 2 single serving sized cups of strawberry applesauce. This was the only change I made. Excellent recipe!

Pepper Jelly Glazed Chicken

Realy great recipe! I doubled the sauce as I wanted extra to pour over rice, but next time I will not double as it made too much. This prevented the sauce from creating a nice glaze on the chicken. I think it would be great with hearty slices of Kielbasa and chucky pieces of red and green bell peppers added!

Vietnamese Fresh Spring Rolls

These are really good except they needed an additional added crunch, so I addd shredded carrots and julienned sliced cucumber (without seeds). Thai basil is very difficult to find unless you are fortunate enough to live near an Asian market that carries fresh herbs. So I added 1/2 again as much cilantro and touch ore mint. The peanut sauce has much more flavor if you combine and warm together s1 part crunchy peanut butter to 2 part hoisen sauce. These can be made vegetarian as is, or you can add cooked shrimp for a wonderful variation.

Vegetarian Korma

Wonderful, flavorful veggie dish! Even my hubby who likes meat in such dishes commented on how good it was (although when asked he said he would not eat as complete supper, but as a side)! I served it as my niece's meal since she is a vegetarian and the rest of use were having grilled chicken. Only two changes, I added 1 cooked cubed sweet potato and substituted coconut milk inplace of the cream. Excellent dish! Next time will double sauce or 1/2 again as much as not enough as is.
