Pineapple Upside Down Pound Cake
About this Cook
I'm a mom of one (3 if you consider my cats). I am a homemaker and professional baker. My favorite place is in my kitchen because I love everything that involves working in it.
My favorite things to cook
My favorite things to cook seems to be Breakfast...anything for Breakfast including pancakes, waffles, french toast, eggs in every way, muffins, donuts. I love to make a big breakfast on the weekends for my son and my boyfriend...unless my boyfriend beats me to the kitchen first, (which I absolutely LOVE also!!!).
My favorite family cooking traditions
Growing up, my favorite thing to do was to watch my grandmother cook homemade dinners that came fresh from her garden, and my grandfather bake, which is where I believe my gift and love of baking comes from. He made the best homemade breads and cakes all the time. My mom then started making sweet yeast rolls and pies for Sundays and when my grandfather passed away, she stopped cooking/baking. so at the age of 11, I started cooking and baking for the family and I've been doing it ever since.

Sweet Corn Bread
This is a very delicious recipe, I did, however a few changes to my recipe, as we like our corn bread on the sweeter side. My recipe included an extra 1/4 c cornmeal, 1/2 c butter, 1/2 c sugar, and instead of regular milk, I used buttermilk. They turned out wonderfully moist and very tasty! Next time I will add some fresh corn to the recipe for a little added texture. This is definitely a must keep in my recipe box!

Restaurant-Quality Baked Potato Soup
Even though my primary love is baking, I really enjoy cooking also. Today we decided to go for some hot, potato soup. This wonderful, flavorful soup is great for the rainy, cold weather we're having. My boyfriend and I paired it with hot, turkey sandwiches, while my son enjoyed a slice of toasted garlic-cheese bread with his soup. We definitely plan on having this soup again in the very near future. I made few changes to our version, I fried the bacon in the stock pot and drained off the fat before adding the butter and onion to give a little bacon flavor to the soup and also a tsp. of minced, roasted garlic. At the end, I added more potato and added a little more half and half, but other than that, I definitely give this soup...5 stars!!!

Strawberry Cake from Scratch
I'm always in search of good recipes and I must say that this recipe is a very good one. I made only a few additions to the cake, in addition to the fact that I made my own cake flour, I added 1 tsp. strawberry extract along with the vanilla and only partially pureed the strawberries leaving some larger pieces. Also I added 1 - 8 oz. container of strawberry yogurt to the batter. I made cupcakes with my homemade, strawberry buttercream icing, and I received so many compliments on this cake!! It was moist, full of strawberry flavor and I will definitely be making it again.
