About this Cook
I am 36 years old, have been married for 10 years and we have three young children (the oldest is turning 7 in a few days). My husband and I both work full time outside the home and I often feel as though there aren't enough hours in the day!
My favorite things to cook
I love to bake desserts. Cookies and bars are probably my favorite, but I enjoy trying all types of desserts, especially anything with chocolate. I love to try new recipes, but due to our hectic schedules, I rely on quick and easy main dishes most of the time.
My favorite family cooking traditions
My mom is a terrific cook, and I grew up watching her. I remember often on Saturday nights she would bake a homemade treat for Sunday. We always had a big Sunday dinner (the noon meal) after church. Her roast beef and homemade noodles with mashed potatoes is still a family favorite! No matter how I try, my roast never turns out as tender and juicy as hers. I hope to pass on the tradition of a large Sunday meal to my children, although they are all very picky so far. It gets frustrating, but I just keep trying...hopefully someday they will appreciate homemade food over frozen chicken nuggets!
My cooking triumphs
I am known by my friends and colleagues for being a good baker. Anything my family likes is considered a success. If I can perfect my mom's pie crust, it will definitely be a triumph.
My cooking tragedies
I remember trying to make meatballs when I was a teenager and they all fell completely apart in the pan. I was in tears. One time I took a green bean casserole to an ex-boyfriend's family Christmas dinner. It was the first time I'd used frozen green beans and didn't bake it long enough--they were almost crunchy! It was very embarrassing, especially since he'd told them I was a good cook. Gravy is always a gamble for me. Biscuits with sausage gravy is one of my husband's favorites; most of the time it turns out great but sometimes the gravy refuses to thicken! I made a pie this past weekend to take to my in-laws. It looked and smelled delicious but I'll never know how it tasted b/c their dog managed to knock it off the counter & eat it while we were outside. Bummer!

Milly's Oatmeal Brownies
Milly, I love you! This recipe is exactly what I was looking for today. I wanted an easy, chewy bar-type dessert, not chocolate, maybe oatmeal...I typed "oatmeal brownies" into the search and this recipe popped up. Perfect! I was a little worried there wasn't quite enough dough for my pan, but I spread it evenly to the edges and it baked up nicely. My husband, kids and the neighbor kids all loved them. I added a handful of chocolate chips but they would still be delicious with no added ingredients as the submitter suggests in her review. This is absolutely one of those recipes I will make often. Thank you so much for this simple but yummy recipe!

Amish White Bread
I followed Breadguy's instructions for using a KA mixer and it turned out great! Very easy, rose beautifully and tasted great- the whole family loved it. In my opinion, the taste isn't quite as good as some other bread recipes I've tried, but it's still delicious and definitely one I'll make again. Our family is trying to eat less animal products, so I appreciate that this recipe doesn't call for milk or eggs. Thanks so much for sharing!

Maria's Mexican Rice
I used long grain brown rice (not instant) and it took forever to cook!!! As in, probably close to 90 minutes, maybe even longer. The rest of the meal was long gone and dishes cleared before this was ready to eat, and even then it was al-dente. I'm sure some of it was my fault because I kept removing the lid to check it every 5-10 minutes after the initial 35 minutes had passed and it was still super crunchy. I also had to add a lot more liquid (used some vegetable stock i had on hand) or it would have completely dried out since it cooked so long. Despite all of that, I liked the flavor a lot, and it was really easy so I will make it again. I'll just have to use a different type of rice or start dinner at the crack of dawn. :-). Thank you for sharing the recipe--it really was tasty, and not the recipe's fault I used a long cooking rice.
