Chinese Mabo Tofu

Good recipe, very easy and quick. Made a few changes: I cook the garlic and ginger first and added the ground meat to give it more flavour. Then I added in the soy sauce and used chilli oil with chilli flakes to give it some heat. To make more sauce, I added in some water and more cornstarch to thicken it up. Once that was cooked, then I added in the tofu and chopped mushrooms. Yummy! Husband liked it very much and he normally doesn't like tofu :)

Quinoa Chicken

Good recipe! I bought a lot of ground chicken from wagjag and was looking for a healthy recipe. I added salt and pepper to taste when cooking the ground chicken, and instead of adding the canned tomatoes, I added fresh tomatoes and scotch bonnet peppers. Yum!

Big Soft Ginger Cookies

Delicious! Made these cookies two years in a row. Thought that the amount of ginger was too much, but once it's cooked - it was just the right amount! Don't worry about the cookies being "too raw" when taking them out of the oven after the said time. The outside is crispy and the inside is soft - yum!

Easy Lasagna II

Really easy lasagna, and delicious too. I love how you can just use the store bought sauce, and it's ready in no time. I added fresh chopped garlic to the pan before putting in the meat (and used ground chicken to make it slightly heathier), as well as onion, kale and mushroom. I also put in chili flakes to give it some kick. I used ricotta cheese for the cheese mixture - yum! I also put it on broil for 10-15 minutes and removed the aluminum foil so that the cheese could get crispy!

Cream of Celery Soup

Really good recipe! I had lots of celery in my fridge because a previous recipe only required two stalks. I normally don't like celery too much, but this soup is delicious! I changed the servings to 5 because 32 is way too much. I used a whole carton of chicken stock, and instead of milk, I used a can of evaporated milk. I also added in more celery than required by the recipe (I needed to use up the celery!) and I also omitted the margarine. Once the vegetables were cooked down (about 25 min), then I used my immersion blender. Then added in the evaporated milk mixture :)

Cut-Out Cookies in a Flower Pot

I have found the ultimate sugar cookie recipe! I tried two other recipes in the past - the first one was bland and the second one was good, but spread too much. This one is perfect! It doesn't spread, so it's great for decorating with fondant. I also used almond extract instead of butter extract b/c I didn't have any and it turned out really yummy!
