Yummy Sweet Potato Casserole

Made this for a football tailgate party. Everyone loved it! Will definitely make it again. Here's what I changed based on the suggestions of other All-Recipers: (1) Instead of boiling the potatoes (or using canned yams), I roasted the whole, fresh sweet potatoes for about 90 minutes at 350 then, when cooled, halved the potatoes and scooped out the flesh. (2) used evaporated milk. (3) doubled the vanilla (4) used my hand mixer to blend all ingredients till smooth. (5) Baked the dish longer than 30 mins - about 40 mins or so. Made the topping better. I made the dish the night before and took it out of the fridge about an hour before baking to bring the dish closer to room temp prior to baking. This recipe truly lives up to its name - YUMMY!

Wine and Dijon Marinated Pork Loin

Excellent! Made this for a recent Christmast party & my guests LOVED it. Be sure to marinate it for 3 or 4 hours prior to roasting. I didn't have plain yogurt so I used sour cream. Also increased the Dijon. Give this on a try - you won't be sorry!

Grandma Johnson's Scones

Excellent! If looking for the perfect scone recipe MAKE THESE! Not too sweet; just right for a scone. I added the zest of 1 orange, 1/2 cup OJ and about a cup of dried cranberries. Made them for my "Royal Wedding Party" when Prince William & Kate Middleton got married - very fun! We topped with "easy clotted cream" (that was OK but I preferred to top with butter) - enjoy!!

Quick Savory Cranberry Glazed Pork Loin Roast

EXCELLENT! Made this for a dinner party last. My Godson had THREE helpings. As a side dish, I roasted sweet potato wedge basted with olive oil and sprinkled with sea salt. I also made a cranberry apple relish. All the flavors were perfect together. I added a bit more horseradish and Dijon than the recipe called for - that was a good add; would do it again for sure.
