Jam Thumbprints

Easy and delicous! I don't like nuts so I left those out. I added the jam halfway through. I also dusted them with powdered sugar. I will make them again.

Stuffed Shells I

My son and I loved this dish! I added a thawed and drained block of frozen spinach, doubled the basil, increased the garlic powder to about 3/4 tsp, and used two cans of Hunt's tomato sauce (basil & herb - what we had on hand). It turned out perfectly and was pretty easy. I thought stuffing the shells would be a pain but it wasn't. Plus, we will be able to get at least 3 full meals out of it (I made another half pan with all the extra shells and stuffing since it didn't fit in one pan). Added to the regular dinner rotation!!

MMMMM... Brownies

Jumbo Dark Chocolate Cookies

I really liked these. I only reduced the salt by a little and made them into smaller cookies (10 min at 350). They are very rich and I will make them regularly.

Candied Pecans

I too reduced the sugar to a half cup and swapped the water with vanilla. I look forward to making these every Christmas because they are so easy and everyone enjoys them.

Perfect Lemon Curd

I have never made anything like this so I was extra cautious, but it turned out great! Sure, it did cook an hour but I really wanted it to wor out. I think I can cook it quicker next time. I creamed the butter and sugar together first, as others had said, then added the eggs one by one. Next I added the lemon ingrediants, cooked it low, and stirred it constantly. Very impressed with myself!

Veggie Vegetarian Chili

Super tasty. I did find it lacked just a tad bit flavor but once I added salt, pepper, 2 tbsp tomato paste, a bay leaf, another tbsp of chili powder and cooked it for over an hour veryone liked it a lot. I think this recipe will made many more times.

Butterscotch Oatmeal

This was really good, I am glad I tried it. I have never eaten a full bowl of oatmeal before but I think I may become addicted to this. I cannot stop thinking about it. I only used 1/3 cup if brown sugar. Can't wait for breakfast tomorrow!

Robbi's M&M Cookies

Turned out perfect. Only thing I did different was use mini M&Ms because I had them left over from the chocolate spiders. Soft and crunchy at the same time, like the others said. *Update* Today I accidentally used butter instead of Crisco, you get so used to butter with cookies you know. The cookies did not come out looking as nice but they were even better than the original recipe, which was very good too. So if you want a messier looking cookie that is gooey and chocolaty, use butter. If you want them to look nicer use shortening.

Meatless Loaf

I probably haven't had meatloaf in over 20 years. I don't know why I never tried making a veggie meatloaf before but I am glad I finally did. This was super tasty. I doubled everything except the soup mix and I topped it with ketchup mixed with a little bit of mustard and brown sugar. I also added sautéed onions and little water to the mixture to get the right consistency. I can see being able to easily change up the recipe for variety.

Strawberry Cream Cheese Clouds

YUM!! How easy are these? And everyone liked them. I couldn't not find any puff pastry shells last minute so I used mini graham cracker pie shells. They were like little strawberry pies, so pretty. Next time I may add just a hint more suger to the cream.

Chocolate Spiders

We loved these cute spiders! I made them three times this October for ourselves, work, and my son's preschool. I used one bag of semi-sweet chocolate chips and one bag of milk chocolate chips, melted, and mixed with one 12 oz bag of chow mien noodles (did it in halves). Then I used the mini M&Ms for eyes. Very cute and easy.

Blonde Brownies I

This is the first time I have baked and eaten blondies but this will be my new standby dessert recipe. I thought the recipe was strange with so much vanilla but it turned out great, and so different than the regular bars and brownies people bring to potlucks and bake sales. I doubled the recipe, used butterscotch chips, and baked for 35 minutes. Perfect!

Easy Apple Crisp

I received a bunch of homemade apple pie filling as a gift and had to use it up. I made this recipe only I incorporated Jen Marshall's alterations and had to bake it nearly double the length of time in order for it to get bubbly and the topping to saturate. But then it turned out pretty good. I will make it again like this.

No Bakes

I really like these cookies with the slight adjustments I have made (which is my reason for four stars). I use a bit more cocoa (over tbsp more), a bit less vanilla (around half), I add a little salt (quarter tsp) and I use just a little less oatmeal (third cup less). I do not really measure these adjustments but they do make a huge difference. Five stars with these changes!
