Chicken Puffs

Use frozen puff pastry sheets in place of the crescent rolls - you don't get the greasy, fake buttery flavor you get with the rolls and it puffs up much better.

Turkey Brine

I used this brine for our thanksgiving turkey. My mom liked it so much that she insisted we make another turkey for her birthday two weeks later. I am now the official thanksgiving chef of the family for the rest of my life because everyone loved this turkey so much.

Hannah's Cream Cheese Caramel Apple Pie

Very good but I found it to be a little too sweet. I cut the powdered sugar in half the second time I made it. Also, the caramel circles only seem to be availble in the fall, so i used the unwrapped caramel peices you can find in the baking isle by the chocolate chips. 1/3 of a cup of the pieces is about 2.5 oz. I mixed them in with the apple slices and it worked beautifully. I left out the nutmeg because I'm not a big fan, but a little ginger might add some zing. I do a lot of baking and this is the best apple pie I've ever made.

Cooked Pumpkin

I get the smell pie pumpkins, puncture them a few times with a knife and put them in the microwave for 5 min at a time until they are tender; then pull it apart and scoop out the seeds.

Key Lime Ice Cream

Came out great but only because I didn't follow the instructions at all... Mix the egg mixture in a bowl. Bring the CREAM mixture to a boil, then slowly wisk hot cream into the egg mixture. Transfer back to the pot and heat slowly, stirring constantly until the mixture thickens enough to coat the back of a spoon. Cool and freeze in an ice cream maker.

Glazed Lemon Bundt Cake

I made this recipe as mini bundt cakes for a luncheon and it was a big hit. I had to increase the glaze by 1.5x to account for the extra surface area in the mini cakes. Also, I microwaved the glaze for about 90 seconds to help the sugar disolve, then dipped the mini cakes in the glaze and let it harden.

Ground Beef N Rice Pie

This was delicious and very easy. The only modification I made was to use a casserole dish instead of a pie pan - there was no way it would all fit.

McCormick® Gingerbread Men Cookies

These cookies came out very well but the dough is very sticky even after being refrigerated overnight. I had to use a ton of flour to roll the dough out but the cookies were very good. The only change I made was 4t fresh ground ginger instead of the dried. 8 minutes in the oven and they were soft and chewy; 10 minutes and they were crunchy like gingersnaps. Good either way. I decorated mine with royal icing. (don't care about the raw egg whites; that is why you have an immune system) They came out looking like classic storybook gingerbread men and tasted great.

Sugar Cookie Icing

This icing is good if you make it right, biut the recipe is wrong. 2 teaspoons of milk leaves you with lumpy powdered sugar. After reviewing other recipes I guessed that the author meant 2 TABLESPOONS milk; kept everything else the same and it worked out pretty well.

Gooey Chocolate Icing

As long as you cook it until it reaches the desired consistency, this icing is perfect. If you don't cook it long enough it will be runny. It is not fluffy like a buttercream frosting (because it is an icing, not a frosting), but it is thick and creamy and rich. I made it for brownies and it was perfect.

Anne's Low-Sugar Chocolate Cake

Awful. I have made a lot of cakes from scratch and this recipe is needlessly complex and didn't rise properly. Not sure how it tastes but it looks so awful that I am not going to try it. Go with a standard chocolate cake recipe (i.e better homes and gardens) and sub sucralose for sugar instead.
