Erin's Cheesy Broccoli Soup

This soup is great! I added carrots and a little ground black pepper, but otherwise kept to the recipe. I also like that it doesn't use velveeta or processed cheese. I took the cooks recommendation and used the 1 Tbsp cornstarch in with one of the cups of milk.

Vegetarian Korma

Absolutely wonderful for a good, vegetarian Indian meal! I make the amendments others suggested and used a 15 oz can of coconut milk in place of the cream and also added that earlier in the recipe so that the potatoes had more liquid to cook in. I would cut back on the salt just a tad next time, but that would be the only thing I would change. Thanks for a GREAT recipe!

Very Chocolate Ice Cream

Wow, this ice cream is the best chocolate ice cream I've ever made. Will continue making it this way from now on. We also had the problem with the chunks- I think some of my eggs did curdle as hard as I tried to not let it happen. Simple solution was to use a colander and strain them out, and viola! Delicious, velvety, chocolate ice cream. Next time, I'll be doubling it because it didn't last long....

Ramen Coleslaw

This is a great change up from your usual slaw. I didn't have any almonds, so I skipped them- didn't miss them! Also if you use the whole seasoning packet, you do not need the 1/2 t. of salt. Great for summer! Thanks!

Roasted Sweet Potato and Carrot Puree

This was ok. If I make it again, I'd cut back on the salt and the cream cheese. My husband and I agreed that it was too rich. I did like the carrots and sweet potatoes together!

Spanish Rice Bake

We decided to try this because we were tired of our usual Mexican meals. I did a few things differently based on some hunches. My husband doesn't like tomatoes very much, so I substituted a can of black beans for the canned tomatoes. I left out the green peppers and substituted salsa for the chile sauce. I cooked the onions with the ground meat. And then to give the casserole more structure I put a flour tortilla on the bottom of the dish, layered the meat and rice mixture on top, then half cup cheddar cheese, then another tortilla, rice mixture and top with another half cup of cheddar. The cilantro garnish is a must! It turned out so well that I think I'll keep my alterations! Thanks for the great recipe!

After-Thanksgiving Turkey Soup

Wow. This soup cannot possibly be good for your arteries, but it was sooooo tasty! It was by far the most delicious turkey rice soup I've ever eaten! It made a ton so we gave some away and froze some to eat for later...which might get eaten tomorrow. Wouldn't change a thing when making it next time...thank you...it's a keeper in our house!
