Pesto Polenta Lasagna

Oatmeal Chip Cookies

Not too happy with these cookies. They taste good, but they spread out and are really flat and not too appealing to look at. Not was I was hoping for as a traditional cookie on a Christmas platter. I am not sure what went wrong.

All-Day Apple Butter

This was my first time making apple butter and my first time canning...and I will definitely do it again! I have an oval crockpot. I filled it to the brim with chopped apples then added 1 cup brown sugar and 1 cup splenda as others have suggested plus 2 tsp cinnamon and a sprinkle of cloves. Left on high for a couple of hours, then turned to low overnight. when I got up I tilted the lid to let steam escape and approximately 3-4 hours later I used an immersion blender, let it reheat and then canned it. Tastes wonderful!

Best Ever Cinnamon Buns

Not sure what happened but mine turned out dry and definitely were not the ooey gooey treats I was expecting! Rose nicely, smelled wonderful, but the flavor just didn't win me over. For the amount of time they take to prepare, I don't think I will be trying these again. Maybe they just need more of the cinnamon/sugar/butter in the middle?

Italian Cheese Bread

This bread had excellent flavor and I will definitely make it again! I used the suggestion of others and added a little olive oil. I used Monterey Jack cheese because that is what I had on hand. I couldn't really taste the cheese. My bread fell in like others have stated they had problems with so I probably wouldn't make it for company because of that, and that is why I only gave 4 stars. Maybe it depends on the bread machine?

Miniature Chocolate Eclairs

Made this into heart shaped eclairs for Valentine's Day and they were delicious! I am only giving 4 stars because I did make some changes. As other suggested, I used the French Pastry Cream recipe instead of the pudding and it was perfect! Also had to add some cocoa powder to the frosting to make it taste chocolate. Mine did not require near the baking time either - not sure if it was because of the shape although I wouldn't think that would make much difference. Will make again though!
