Creme Brulee French Toast

I made this today gave it a a 3-star rating at best. I think my first mistake was cutting the brown sugar in half. I didn't get that wonderful sauce at the bottom of mine and I think that is why. Cutting she sugar to 3/4 a cup like others have done might work fine, but if I try this again, I'm going to start with the entire 1 cup (as excessively sweet as that may seem). I also got the eggy consistency that others have mentioned. My Mom's version didn't have this. I'm not sure why, but I'm guessing that I got this because my bread didn't completely cover the bottom of the baking dish. The next time I try this, I think I will completely cover every square inch of the dish as possible. That way the bread will absorb all of the egg mixture. The only other change I made (except halving the sugar and leaving the custs on) was using 1-2 tbs of orange juice instead of grand marnier because I didn't have it. But here is my main point: many reviewers are saying this is an easy or foolproof recipe. Perhaps if your cooking level is excellent, it is. But if your cooking level is any less than excellent, I would not experiment too much with this recipe the first time, except to leave the crusts on. This is a recipe where technique is essential for texture.

Turkey Pot Pie I

We made a turkey that had been in our freezer since last Thanksgiving. My husband gets a free turkey every Thanksgiving from work, and since we never do Thanksgiving at our house, every October we make turkey to make room in the freezer for the next one. This weekend we made our turkey and now we had to figure out creative ways to use the leftovers. This was dinner last night, and the first homemade pot pie I attempted (the crust was store bought). My family loved this. My husband ate half the pie. I had to make some adjustments based on what I had on hand. 1. I had a 9 in. pie crust and pie pan so I reduced the ingredients. For step 2 in the original recipe, I used 1 carrot, 1 celery, 2 small potatoes, 1 1/4 cup of turkey, and 1 cup of water. 2. I heated the vegetables in olive oil instead of butter in an attempt to make it healthier. 3. I added fresh minced garlic in with the potatoes. 4. I don't buy chicken bullion cubs so I added 1-2 tbs. of homemade leftover turkey gravy (made from the turkey drippings) to the 1 cup of water. 5. I replaced the oregano and parsley with 2 1/2 tsp. of Ms. Dash table blend. 6. In step 3 from the original recipe, I didn't use flour and butter because I had leftover turkey gravy. I heated 1 cup of leftover turkey gravy and 1/4 - 1/3 of milk with the turkey. 7. I had some left over cooked mixed vegetables (broccoli, cauliflower, corn and pimento) that I added at the end.

Lemon-Blueberry Oat Muffins

I found this searching for a basic blue berry muffin recipe. I don't like the really sweet muffins either. My experience has been that most homemade muffins aren't too sweet, but the ones in bakeries and restaurants in my area are sweet and dense and huge! I guess I'm an odd duck, because those sweet, dense, huge muffins almost make me sick. I only really like muffins made at home either from scratch or a mix. Homemade muffins, in my experience, are usually light and fluffy. These muffins were what I expected, light and fluffy and not too sweet. I mostly followed the recipe, except I didn't have brown sugar and had to omit the topping. I didn't have lemons and was going to just omit the lemon zest, but my husband suggested using orange zest instead, and this was a good idea. I used the same amount of orange zest.

Jackie's Special Meatloaf

I have been making these recipe for years. Before this recipe, I always messed up meatloaf. Now this is a staple in our house. I sometimes substitute half of the breadcrumbs for oatmeal.

BUSH'S® Pumpkin Bean Burgers

These looked really good to me, but my husband thought they sounded strange. By sighting the 5 star rating, I was able to convince him to try them. On flavor, I would give them a 5 stars, however, when I made them, they were very wet and soft, and did not hold their shape very well, even after chilling for 2 hours (quadruple the recommended chill time). I am trying them again, but I've added an egg, and 2/3 cups of bread crumbs. Already they seem much firmer. They are chilling now. I will try to remember to let all know how they turn out this way. EDIT - adding an egg and 2/3 cup of bread crumbs did the trick. Now these hold their shape quite well, and I have increased my previous 4 start rating to 5 stars!
