Cabbage Roll Casserole

Easy and delicious. I added some of my grandmother's ingredients for stuffed cabbage. I used half ground beef and half ground pork and browned with the rice to make it fluffy. As suggested added garlic. To give it some zip and saltiness I used a jar of sauerkraut (drained)as well as the cabbage and half tomato sauce and half V8 Juice. Simmered in a pot about 40 min. Will definitely add to our "hit" list!

Shrimp Gazpacho

I made this recipie for my bunko group and they loved it. The only different ingredient I used was Clamato Picante style juice and it added just the right amount of spice. Will definetely make this again.

Mom's Coleslaw

This was very good, but I agree if you are not going to serve right away, the coleslaw gets soupy. So next time I will cut the dressing in half. Also at my husband's request I added some raisins. I will definetely make this again!
