Firecracker Grilled Alaska Salmon

I have made this recipe countless times... I substitute always about 3 tablespoons of the peanut oil with 3 tablespoons honey & brown sugar to cut down on the fat and it was SO delicious...I also set aside some of the marinade (didn't soad the fish in it) so that I could glaze the top of the salmon with it after BBQing! Easy to make and everyone I made it for loved it! Be sure to make enough, though, I ran out!

Pumpkin Swirl Bread

Incredibly moist & delicious- by far the best bread I've made... Great as a gift! I did make some changes though- I added more cinnamon (I love spice) & also added chopped walnuts into the pumpkin mixture. I'm sure this would taste wonderful without the walnuts as well but they definately add a lot of flavor to the bread. YOU WILL NOT REGRET TRYING THIS RECIPE! Also, you can substitue reduced-fat cream cheese w/out losing any of the great taste.

Apple, Cranberry, and Pear Crisp

This recipe is by far the best one I've tried for a Crisp. It has just the right amount of everything- I once mixed dried cherries in as well. Everyone I have served this to has loved it- even the GUYS.

German Brotchen Rolls

These take a LOT of time but they DO taste good. They are a bit tricky to make and taste very 'yeasty'. While it is a good recipe, I don't think they are very reminicent of the ones I had in Germany.

Strawberry Cheesecake Muffins

I loved these muffins- though they weren't what I'd been attempting to re-create from the kind I'd tasted at a bakery. The lemon zest adds a wonderful flavor. I created six giant muffins instead of twelve smaller ones and they came out looking great... the only reason why I gave it four stars instead of 5 is because they were more dry than I'd hoped for- definately will make another batch sometime though.

Blueberries n' Cheese Squares

i'm not a cheesecake fan but i really enjoyed this recipe- mixed in some fresh blueberries as well and used cinnamon graham crackers for the crust to give it some more flavor... i did do one other thing differently: i folded the whipped cream into the cream cheese mixture so made two layers of the same kind of spread- it tasted excellent- will make again but next time i'll be using 1/3 reduced fat cream cheese instead and maybe even light whipping cream- this tasted almost too heavy.

Pesto

This is an excellent pesto recipe but it wasn't everything I was hoping for... adding some chicken broth in place of the oil helps cut down on some of the fat... I ended up revising some of the proportions of some of the ingredients until I could get it to taste 'just right'... But it's the best one I've found on Allrecipes!

Easy Chicken Meatballs

I made these one time the way the recipe was given, then I re-worked in the second time around, using pork instead, adding fresh garlic, and also chopped mint (which is popular to do in Mexico). I then boiled them in chicken broth with tomato, onions, salt, basil leaves, and a mint sprig for twenty minutes. Everyone loved them better the second time but this recipe was helpful in figuring out what ingrediants to use for the most part!

Avocado Quick Bread

This idea behind this recipe intrigued me... It's a different but delicious taste- I enjoyed it a lot- added more raisins as well as some more chopped pecans- my mother did comment, however, that it tasted too much like allspice- maybe I'd lessen that if I was to make this again. It's a unique bread- one that I don't think would go unnoticed if served- I definately don't think I wasted my time making this.

Pumpkin Cheesecake in a Gingersnap Crust

I did what someone else had said they had done before, & substituted a mix of pecans and walnuts in place of the hazelnuts in the crust. Also added a little more cinnamon and a little less allspice. This was delicious!

Baked Orange Roughy Italian-Style

This recipe tastes wonderful- I've made it several times and always add on a sauce of pre-cooked capers, tomatoes, black olives, red pepper flakes, onions, zucchini, seasonings, and garlic to boot and let that sit on the orange roughy as it is baking... YUM!

Garlicky Potatoes

As I was making this (tasting it), yes, I did find them bland... I ended up putting more sour cream in, attempting to correct the problem as well as adding more salt and some peccorino romano (parmesan would work as well) cheese to it. It makes the potatoes a bit richer but the taste most definately is enhanced.

So so excited to try this recipe out, then so so disappointed with the results...maybe I should not have help them up to the same expectations as a muffin that I'd tried at a coffee shop once which beared the same name.

Fig and Lemon Chicken

This had a unique taste to it, using thighs instead of breasts definately made this worth-while to make but, for my family, it wasn't saucey enough... the next day I ended up pureeing 3/4th of the figs in a blender with salt to taste & chicken broth and then spreading it onto the leftovers (of which, unfortunately, there were plenty of).
