Mini Cheesecakes II

I have been using this as a whole cheese cake recipe for years with a cookie crust so decided to try as mini cakes when I saw this. Well it came out really good. I still used my cookie crust of 1 1/2 cups vanilla cookie crumbs with 6tbl butter melted. After mixing I placed two tbl crumbs into each muffin cup and pressed in with the back of the spoon so that some came up the sides a little. Filled cups and got 12 mini cakes. Looked really cute with topping and whipped cream may give as xmas gifts.

French Apple Pie with Cream Cheese Topping

This is a cake however I think next time I will double the apples to see if its less cake like. That said it tasted quite good. I creamed the butter and sugar first then added the other ingredients and the apples were mixed in last. At 40min was done so suggest you keep a check on it. Would leave out the nuts next time was not a favourite here, also had no nutmeg so doubled the cinnamon only change I made. I used about 4 medium apples there. The cake came out dark was worried it was burnt but thats how it is supposed to be. Served with whipped cream did not make the topping will try next time.

Lemon Basil Rice

nice side dish didn't have stock so used bouillon cubes with 2cups water also left out the salt did not need it with the cubes. I'm sure would be even better with the stock.

Italian Spaghetti Sauce with Meatballs

I can only rate the meatballs since I used a different sauce. I actually used minced chicken and it came out very well. Thought it would not be properly cooked inside since there was no pre-browning but that was not the case. Will try again with sauce in future.

Key Lime Pie VII

Not having tasted any florida pies was not sure how this was supposed to taste however it was so simple I used a vanilla wafer crust 1 and 1/2 cup crumbs with 6tbl butter wafer is already sweet so no sugar needed. The filling I mixed lime and lemon juice to get the keylime flavour since we don't have this type in my country. This was easy and soooo tasty right mix of sweet and tang and easy to make it took 10min in my oven. Will make this again for sure.

Clone of a Cinnabon

These were great just that I left them in a little to long but they were still great for my kids at home who love love cinnamon rolls with melted cheese yes cheese not frosting and thats a breakfast item in this home.

Rich Chocolate Frosting

This was the best. Used quarter of the recipe for some cupcakes I made for my son. Used 1/2 cup margarine (I know it said no subs but its what I had) 2 1/4 cups confectioners sugar, 1/4 cup milk and same 1tsp vanilla extract. Guess you can make this as sweet as you want but that was good enough for us. This is the frosting I will now be using so good and so simple. Thanks for sharing Made again forgot to add 1/4-1/2 cup cocoa

Grandma's Lemon Meringue Pie

My daughter really made this I just helped her in the kitchen for a change. We are both lemon meringue pie fanatics and this was really worth the effort. Did take some time to thicken but other than that all went well. Did not last long in the fridge.

Honey-Garlic Glazed Meatballs

I made the sauce for the second time today so decided to review the sauce only. I did use one tbl worcheshire sauce and two of the soy sauce. I also used breast strips and baked in the sauce. My vegetarian daughter used the sauce with the rest of the meal since I had some leftover. Will include in my rotation.

Spice Baked Rice

Tops for quick and easy. I had to use 1tin of diced tomatoes, 1tin of tomato soup with 1/2 tin water to sub for the tomato juice also used pimento peppers and black pepper instead of chili. 2cups rice since I thought 3 too much. Also used ground chicken instead. All these changes were due to the fact I did not have all at hand and the chili was necessaary however didn't know I was out till to late. Also did put in some garlic with the onions. With all these changes it still came out pretty well and will make again with the correct ingredients except always will use minced chicken. I think minced soya will also do well like Yves brand.

Fluffy Biscuit Muffins

With no bread in the house and not much time before my sons got up I looked up AR for a simple biscuit recipe. This was it quick and simple. I did double and added 2tsp brown sugar to the doubled amount giving me 11 muffins. Will definitely be making again.
