About this Cook
I have always LOVED to bake and I am very good at it. My specialties are desserts. However, in all of my years of cooking, I still always use recipes. I have never tried to "create" something of my own. I'm now trying to cook main dishes more -- and I'm trying to diet. This is a challenge. I'm needing help in this area.

Desserts: Cakes, pies, tortes, bars, candy, cookies, mousse, etc.
My favorite family cooking traditions
We're NOT Italian by heritage; but everyone in my family cooks superb Italian food. I was also raised in El Paso, so my first meals were Mexican food -- which I still love today!
My cooking triumphs
Most anything is "do-able" if I follow the recipe correctly! I make the best chocolate cake EVER!
My cooking tragedies
Messing up the simple things: like burning the rice, broccili, cauliflower, etc. Have added too much of a spice, like fresh rosemary to lasagne once and everyone kept picking stems out of their mouth!

Dark Chocolate Bacon Cupcakes
I have a mixed review for this recipe. I LOVED the dark chocolate cake -- for a couple of days. But even refrigerated, by the 4th day, the cupcakes (underneath the frosting) were very dry. Maybe it's not supposed to be refrigerated, but I made a frosting with cream. Then, the bacon was, as another reviewer stated, just kind of something chewy mixed in. Either I needed to crumble the bacon very FINE -- or just leave it out altogether. I WILL make this recipe again though --just for the dark chocolate cake.

Penne, Peppers, and Chicken-Apple Sausage Saute
This is delicious -- WITH the addition of a can of diced tomatoes with seasoning, as this is very dry. I made this with about 1/3 of the penne pasta, but followed the recipe for everything else and it was still dry. I put generous parmesan cheese on top. YUM!!

Fran's Angel Food Pie
Have not tried it yet; but did read the 2 negative reviews. My first thought was that I would add either melted chocolate (or cocoa) to the bottom layer (making it like chocolate mousse) -- OR add pineapple & nuts to the filling (making it like millionarie pie). Perhaps that will "jazz" it up!
