Scallop Pesto Pasta

So good! I've never cooked with scallops before but it was pretty easy! I took the advice of some others and pan-fried/seared the scallops in butter. I also added some minced garlic. After the scallops cooked, I took them out of the pan and semi-cleaned the pan. I added the pasta and pesto sauce to the pan and stirred it around w/ a little bit of salt. Lastly I plated the pasta, added the scallops, and topped with some chopped tomato. Very simple and delicious recipe!

Bacon Mushroom Swiss Meatloaf

I tried this recipe awhile ago so I don't remember all the changes I made, but I guess this is an example of why people don't like reviews after changes were made to the recipe! I think I took too much of other people's suggestions/review changes. It seems that the recipe itself would probably not turn out the way mine did. I added some salt and pepper, garlic powder, garlic, and did the cubed cheese thing. All of which ended up making my meatloaf WAYYY too salty. My friends said it was okay, and I normally like some salt in my food, but it was even too salty for me. I gave it 4 stars bc I'm sure it would have turned out fine had I not added so much other stuff! I think the pepper and some minced garlic is good but no more salt! The bacon is already salty enough! What was I thinking?! And I think the shredded cheese would have been fine too. Sorry for screwing w/ the recipe! :P

Pasta Bake

Yum! I'm going to do what I don't like doing (changing the recipe and reviewing) but only because I think the recipe is a great base! I added a bunch of mashed garlic cloves before cooking the beef. Also added fresh ground black pepper, oregano, and some spicy sausges. I used a rotini pasta and also added a bit of parmesean over the shredded mozzarella. GREAT, easy dish! Can't wait for lunch time to have some leftovers! Haha! =)

Cappuccino Bon-Bons

Little bits of cappuccino wonderfulness! I followed the advice of others and used 2 tablespoons of the instant coffee. Otherwise, I followed the recipe closely. They are so cute and so tasty! Everyone I shared with thought it was different (in a good way!) and they enjoyed it! So easy and very good. I'm not a huge coffee drinker, but I had a jar of instant coffee from a tiramisu recipe I tried awhile back so I'm glad I got to bust it out and use some of it! I will happily make these again!

Grilled Tuna Teriyaki

Really good! I increased the amount of garlic and I marinated the steaks in the fridge longer than 30 minutes, but only because I had time. And I didn't grill the steaks but rather pan fried them. My only problem was that I cooked them just a tad too long. I wanted them to have a pink center, but it cooked all the way through. However, despite that, it still turned out delicious! My bf and I both really enjoyed this meal. Too bad tuna steaks are a bit pricey!

Ultimate Maple Snickerdoodles

Definitely not as mapley as I thought it might be w/ the name being what it is. But that's a good thing for me. This recipe was simple and turned out great. I didn't use the maple sugar though. For the last step I just mixed about 1/4 cup of brown sugar, 1/2-3/4 cup of white sugar and some ground cinnamon (made 2 batches). Definitely not as mapley as I'm sure it would have been with the maple sugar, but still a good cookie.

Parmesan Knots

So simple yet fancy! I used butter instead of oil like many suggested. Next time I'll try a different kind of bread like some people did. It's a nice alternative to the normal garlic bread when having pasta!

Scottley's Basic Yellow Cake

Perfect because I had all the ingredients when I felt like baking cupcakes! First time making yellow cake from scratch and I'd have to say it was pretty easy! I used 1 extra egg like some suggested. And instead of a round cake I did a pan of mini cupcakes and 21 regular sized cupcakes. I'm not sure why, but when the mini cupcakes came out, there was a pocket of air at the bottom of the cupcakes. So the mini's came out even smaller than the cupcake paper. My husband thought they were a bit dry, but I think they were fine. I'm not sure if it's because it didn't have the usual cake-y consistency/texture, but I thought they were fine! Perhaps it was that I used 2% milk instead of whole milk? I'd try it again though!

Five Minute Ice Cream

Not bad for being so easy!! I played with the recipe a little and took suggestions here and there. It does turn out soft, but it is fine if you freeze it longer. I'd try it again with different fruits when it gets hot again!

Hot and Spicy Tofu

I used sesame oil instead of the peanut oil only because that's what I had. I used chicken stock for the hot water and honey for the brown sugar. I think I could have done without anything to sweeten it. The whole thing was just too sweet for me. Also, I had the wrong kind of green chile pepper, so that didn't help. But overall, too sweet. I think I'd try it again but with no sugar or honey and the right type of chile. :P

Capers and Halibut

Tasty dish. I think I could have reduced the amount of butter, like someone said, but it was fine. I also used a teflon pan so there wasn't much browning, but again, it was fine. Alaskan halibut is quite pricey! I'll try a different white fish next time, but this was yummy and I'd make it again!

Chicken with Green Peppers in Black Bean Sauce

Good recipe! It looks a little intimidating because of all the list of ingredients, but when it comes down to it, it's not difficult at all. I used black pepper sauce (that's what I had at the time) and it ended up being good. It's pretty much the same consistency and similar in taste, I think. I didn't add any salt and I used about half of the soy sauce that the recipe called for. Otherwise it would have been too salty. There's enough flavor in the sauce itself. I also used chicken stock in place of the chicken buillon and added water chestnuts. Tasty and not very hard to do.

Garlic Chive Chicken

This was a simple but delicious meal! I only used 2 chicken breasts and cut them up into strips. But I almost doubled the sauce after reading reviews. It ended up being a little more sauce than needed, but a little more is better than not enough! I also added some cornstarch and about 1/4 cup or so of white wine to the sauce. Yummm. I'll going to try this again!

Szechuan Spicy Eggplant

Yummy! I had 3 Japanese eggplants instead of the large one. I also did not use any shrimp. It turned out so yummy! I think the only con to this dish is that the sesame oil at the end can be a little much. I put less but it still seemed like a little too much. I don't usually cook with eggplant, but this recipe is definitely going to be a repeat! Thanks!

Easy Chocolate Chip Cookies

So simple and so good! I barely had 1 cup of mini chocolate chip cookies, but it was a great amount! And I also added maybe 3/4 cup of chopped walnuts. Soo easy!! I'll try it w/ chocolate cake mix next time! This will definitely be a go-to recipe!!

Ten Minute Szechuan Chicken

Pretty tasty! I followed someone else's suggestion of replacing 2 of the tbs of soy sauce to 1 tbs rice wine vinegar and 1 tbs sesame oil. I also added a small can of mushrooms and some more green onion than called for because green onions are great! Sprinkled some sesame seeds at the end and enjoyed! Thanks!

Chicken Pesto Pizza

delish! i used a boboli wheat thin crust prepared pizza and added thin sliced onions and mushrooms. it was really yummy! i kept it in the oven a couple minutes longer to get the crust slightly crunchier, but all in all it was a simple recipe to follow, and it turned out great! thanks!

Big Soft Ginger Cookies

I tried this recipe a few times now, and each time it was a great success. They really do stay soft for a long time and they taste great as well. They're a little sweet, but what cookie isn't? This was one of the first times baking cookies from scratch (I haven't been baking very long), but I have to say it wasn't too difficult and it turned out very nicely!
