Chicken Enchiladas

I followed a couple reviews and used way more enchilada sauce. The last recipe I used never seemed to call for enough sauce so I used 1 28oz can for this recipe. It was not as dry as the other recipe I followed. I minced a few cloves of garlic w/ the chopped onions. And I added a lot of cheese. I know that deviates from the given recipe a bit, but still turned out tasty!

Pasta Bake

Yum! I'm going to do what I don't like doing (changing the recipe and reviewing) but only because I think the recipe is a great base! I added a bunch of mashed garlic cloves before cooking the beef. Also added fresh ground black pepper, oregano, and some spicy sausges. I used a rotini pasta and also added a bit of parmesean over the shredded mozzarella. GREAT, easy dish! Can't wait for lunch time to have some leftovers! Haha! =)

Ten Minute Szechuan Chicken

Pretty tasty! I followed someone else's suggestion of replacing 2 of the tbs of soy sauce to 1 tbs rice wine vinegar and 1 tbs sesame oil. I also added a small can of mushrooms and some more green onion than called for because green onions are great! Sprinkled some sesame seeds at the end and enjoyed! Thanks!

Easy Bake Fish

Boo. :( I'm sorry to say I did not enjoy this as much as everyone else did. I followed the recipe exactly how it is, but it did not cook completely at the time/temp stated and I just didn't enjoy the taste.

Pesto-Stuffed Pork Chops with Caramelized Onions

Easy recipe to follow. Didn't have cumin so was going to skip that, but ended up getting the spice and liking the flavor it added. I may have cooked the pork too long before baking them (or perhaps I baked them too long) but they were a little bit dry. I would definitely repeat this recipe, just cook them a little less than this time. Oh, and I'd add more onions. You can never have too much!

Capers and Halibut

Tasty dish. I think I could have reduced the amount of butter, like someone said, but it was fine. I also used a teflon pan so there wasn't much browning, but again, it was fine. Alaskan halibut is quite pricey! I'll try a different white fish next time, but this was yummy and I'd make it again!

French's® Crunchy Onion Chicken™

Simple and delicious! I added a little bit of salt into the flour/crunchy onion mix and some tabasco into the egg. I think I could have added way more tabasco (I like things spicy!) because I could barely taste any spice. But all in all the chicken turned out juicy and very tender. A definite keeper!

Pan-Seared Chicken Breasts with Shallots

Very good recipe! I pretty much followed the exact recipe, except I added a little more garlic and maybe a tad less butter only because I was done with that stick. But it turned out beautifully. It's definitely a keeper. I think I'll double the sauce because mine reduced down quite a bit. Maybe I let it sit on the fire too long? But it was still delicious and I felt like it was a restaurant-worthy recipe! :)

Marinated Baked Pork Chops

Good recipe! Simple, easy, tasty! At the last minute I decided to add some minced garlic (after I baked for the first 30 min and flipped them). They remained tender and juicy and we loved 'em! Thanks!

Scallop Pesto Pasta

So good! I've never cooked with scallops before but it was pretty easy! I took the advice of some others and pan-fried/seared the scallops in butter. I also added some minced garlic. After the scallops cooked, I took them out of the pan and semi-cleaned the pan. I added the pasta and pesto sauce to the pan and stirred it around w/ a little bit of salt. Lastly I plated the pasta, added the scallops, and topped with some chopped tomato. Very simple and delicious recipe!

Sweet, Sticky and Spicy Chicken

Mmm! I love spicy and this certainly lived up to its name! Well, it wasn't that sweet but it was good. I used sriracha for the hot sauce and I sprinkled LOTS of pepper. Maybe a tad too much. But it was deliciously spicy. =) Not to mention easy to make! Thanks!

Chicken with Green Peppers in Black Bean Sauce

Good recipe! It looks a little intimidating because of all the list of ingredients, but when it comes down to it, it's not difficult at all. I used black pepper sauce (that's what I had at the time) and it ended up being good. It's pretty much the same consistency and similar in taste, I think. I didn't add any salt and I used about half of the soy sauce that the recipe called for. Otherwise it would have been too salty. There's enough flavor in the sauce itself. I also used chicken stock in place of the chicken buillon and added water chestnuts. Tasty and not very hard to do.

Penne with Chicken and Asparagus

Thanks Laurel! This turned out really well! I started out half-ing the receipe because it was just for me and my bf but I kinda kept adding to it (chicken broth). I used egg noodles because that's what I had, and I also added some chopped mushrooms just for a little something extra. I also added some dried basil leaves in at the end and it added a light hint of the herb flavor. It indeed is an easy recipe to follow and had a nice light flavor. Right before serving, I threw on some parmesean (as stated in the recipe) and some red pepper flakes. DELICIOUS! And my bf loved it. Thanks!

Real Potato Leek Soup

A nice and simple recipe for my first soup. I've never made my own soup before but this was a fairly easy recipe to follow. I halved the amount of everything and it still turned out to be a lot. Oh, I added some chopped mushrooms as well. I wish I had bacon to add, because it seemed like it would have added a lot of flavor to this simple soup, but it was still yummy and I'm glad I tried it!

Grilled Tuna Teriyaki

Really good! I increased the amount of garlic and I marinated the steaks in the fridge longer than 30 minutes, but only because I had time. And I didn't grill the steaks but rather pan fried them. My only problem was that I cooked them just a tad too long. I wanted them to have a pink center, but it cooked all the way through. However, despite that, it still turned out delicious! My bf and I both really enjoyed this meal. Too bad tuna steaks are a bit pricey!

Cowboy Cookies III

So good! I made these on Saturday but followed some people's suggestion and did 3/4 cup of both sugars and about 2 tsp of vanilla. They turned out great! I brought some to work and they're still chewy and they aren't TOO sweet. An easy recipe that got rave reviews from my co-workers and friends! Thanks!

Chicken Breasts with Balsamic Vinegar and Garlic

A delicious meal! Make sure you watch the sauce as it's simmering (when it is covered). I turned my back to wash a couple dishes while my sauce was simmering, and I turned to find my sauce had splattered out of the pan and made a little mess around the stovetop! Oops. :P Luckily I caught it in time before all my sauce ended up on the counter. I really liked the garlickiness of the sauce(I probably added more than required) and the mushrooms were perfect. I only wish I had some more to add! I served the chicken with steamed rice and a mixture of steamed veggies. Simple but flavorful meal.

French Dip Sandwiches

Quick and easy! Well, my bf did all the work for this one, but he said it was easy. Haha. And I guess it's not quick since you slow cook it, but it's a quick preparation process. There weren't too many ingredients and the slow cooker really brought out all the flavors. We got some horseradish to give the sandwiches a little kick and served them in a whole wheat french loaf with the dipping sauce on the side. He also served these sandwiches with some pickle slices and curly fries. Yummy!

Asian Beef with Snow Peas

Yum! I pretty much followed the recipe, but just doubled the quantity. I also listened to what some of the others said about increasing the sauce per meat ratio. I used beef sirloin, which was a good tender cut, and added sliced bamboo shoots. The sauce wasn't all that thick, but I think it ended up how it was meant to be. Quick and easy recipe and good flavor as well!
