Ultimate Maple Snickerdoodles

Definitely not as mapley as I thought it might be w/ the name being what it is. But that's a good thing for me. This recipe was simple and turned out great. I didn't use the maple sugar though. For the last step I just mixed about 1/4 cup of brown sugar, 1/2-3/4 cup of white sugar and some ground cinnamon (made 2 batches). Definitely not as mapley as I'm sure it would have been with the maple sugar, but still a good cookie.

Garlic Chive Chicken

This was a simple but delicious meal! I only used 2 chicken breasts and cut them up into strips. But I almost doubled the sauce after reading reviews. It ended up being a little more sauce than needed, but a little more is better than not enough! I also added some cornstarch and about 1/4 cup or so of white wine to the sauce. Yummm. I'll going to try this again!

Delicious Raspberry Oatmeal Cookie Bars

This is a simple, yet yummy cookie bar recipe. It's different from anything I've baked before, but it was tasty! I modified the recipe a bit, following the suggestion of another reviewer to make it slightly more healthy. I doubled the recipe to make it in a 9x13. I used 1 stick of butter and for the other stick, I replaced it with 1/4c of applesauce and 1 egg like someone else said. Since I didn't try it the original way, I can't say it was better or different. I'm sure the original recipe would probably taste a bit more buttery and the bottom may have been a bit more crunchy. And I only put 1c of the raspberry jam. Overall, it was still good. I'd try it again with a different kind of jam. :)

Parmesan Knots

So simple yet fancy! I used butter instead of oil like many suggested. Next time I'll try a different kind of bread like some people did. It's a nice alternative to the normal garlic bread when having pasta!

Cappuccino Bon-Bons

Little bits of cappuccino wonderfulness! I followed the advice of others and used 2 tablespoons of the instant coffee. Otherwise, I followed the recipe closely. They are so cute and so tasty! Everyone I shared with thought it was different (in a good way!) and they enjoyed it! So easy and very good. I'm not a huge coffee drinker, but I had a jar of instant coffee from a tiramisu recipe I tried awhile back so I'm glad I got to bust it out and use some of it! I will happily make these again!

Scottley's Basic Yellow Cake

Perfect because I had all the ingredients when I felt like baking cupcakes! First time making yellow cake from scratch and I'd have to say it was pretty easy! I used 1 extra egg like some suggested. And instead of a round cake I did a pan of mini cupcakes and 21 regular sized cupcakes. I'm not sure why, but when the mini cupcakes came out, there was a pocket of air at the bottom of the cupcakes. So the mini's came out even smaller than the cupcake paper. My husband thought they were a bit dry, but I think they were fine. I'm not sure if it's because it didn't have the usual cake-y consistency/texture, but I thought they were fine! Perhaps it was that I used 2% milk instead of whole milk? I'd try it again though!

Chicken Enchiladas

Yummy recipe! I added a couple things like some others did. I used half cheddar and half monterey jack cheese. I also added a small can of green chilies and half a small onion diced into the chicken mixture. Oh, I had more than half of a rotisserie chicken so I shredded that. Otherwise I did not do anything else majorly different (or maybe those are a lot of changes already). Haha. But anyway, it turned out great! I liked that it was not dry inside and the cheese was perfectly oozy because it was inside and on top. I think the leftovers are even better! I am going to do this recipe again!

Chocolate Chocolate Chip Cookies I

Yummy! I made these for the 2nd time last night to give out for Christmas to my co-workers. I used brown and white sugar instead of all white, and I also used a package of crushed Andes mint chocolates. They are perfect for the holidays! Or year round! I made them kind of small, about 2.5 inches in diameter so that yielded quite a bit of cookies - approx 7 dozen! And they do tend to be a little flat, but they're perfect for stacking and giving out. =) I will try it again with nuts next time.

Apple Bread

Great recipe! It definitely was a bit of work chopping all the apples and working everything together. The dough is a bit tough to work with because it is a bit dry. I followed the recipe exactly as it is and was a little scared because it did not look like it was enough for the two bread pans, but they turned out so nicely! Considering the amount of sugar, it wasn't as sweet as I thought it might be. People enjoyed it on Thanksgiving as another option for dessert. I will definitely do this again!

Five Minute Ice Cream

Not bad for being so easy!! I played with the recipe a little and took suggestions here and there. It does turn out soft, but it is fine if you freeze it longer. I'd try it again with different fruits when it gets hot again!

Baked Teriyaki Chicken

Yum! I pretty much followed the recipe but used boneless chicken breast instead because that's what I had. Turned out great! I think I had it in for less though because I only had 2 chicken breasts and they were kind of thin. My husband and I aren't huge teriyaki fans because it's usually too sweet, but it was good! I will try with salmon next time, like someone else said! Thanks!

Seared Ahi Tuna Steaks

Delicious! It was really easy to make and even better to eat! The only problem was that I actually couldn't cook the peppercorns that long! They started popping out of the pan! So that's when I just put the fish in. But it was still really yummy. I'll definitely make it again!

Szechuan Spicy Eggplant

Yummy! I had 3 Japanese eggplants instead of the large one. I also did not use any shrimp. It turned out so yummy! I think the only con to this dish is that the sesame oil at the end can be a little much. I put less but it still seemed like a little too much. I don't usually cook with eggplant, but this recipe is definitely going to be a repeat! Thanks!

Hot and Spicy Tofu

I used sesame oil instead of the peanut oil only because that's what I had. I used chicken stock for the hot water and honey for the brown sugar. I think I could have done without anything to sweeten it. The whole thing was just too sweet for me. Also, I had the wrong kind of green chile pepper, so that didn't help. But overall, too sweet. I think I'd try it again but with no sugar or honey and the right type of chile. :P

Bacon Mushroom Swiss Meatloaf

I tried this recipe awhile ago so I don't remember all the changes I made, but I guess this is an example of why people don't like reviews after changes were made to the recipe! I think I took too much of other people's suggestions/review changes. It seems that the recipe itself would probably not turn out the way mine did. I added some salt and pepper, garlic powder, garlic, and did the cubed cheese thing. All of which ended up making my meatloaf WAYYY too salty. My friends said it was okay, and I normally like some salt in my food, but it was even too salty for me. I gave it 4 stars bc I'm sure it would have turned out fine had I not added so much other stuff! I think the pepper and some minced garlic is good but no more salt! The bacon is already salty enough! What was I thinking?! And I think the shredded cheese would have been fine too. Sorry for screwing w/ the recipe! :P

Chocolate Mint Cookies I

Soo good! I followed everything as written except my cookies were small so I ended up cutting the Andes mints into quarters. It was also because I was afraid my one box wouldn't be enough. So luckily the 1/4 pieces were perfect! It was enough of the minty flavor and a good amount to top the cookies. Easy and yummy! I got reviews that they're even better than the Girls Scouts' Thin Mints! :) These will definitely be my next holiday go-to cookie! :D

Easy Chocolate Chip Cookies

So simple and so good! I barely had 1 cup of mini chocolate chip cookies, but it was a great amount! And I also added maybe 3/4 cup of chopped walnuts. Soo easy!! I'll try it w/ chocolate cake mix next time! This will definitely be a go-to recipe!!

Persimmon Bread II

Excellent! I've made this twice now and both times it came out great! It's not super sweet like I thought it might be, which is good! Adults and kids can both enjoy this recipe. It's pretty easy to follow and it tastes great. The only thing is that it doesn't have a strong taste of persimmon, but maybe that's a good thing? I made it during Christmas time and gave it to my parents and other family. Everyone really liked it!
