Asparagus and Smoked Salmon Salad

This makes a great summer meal. I had it with the Parmesan Corn Chowder from this site and they went really well together. The dressing is pretty zesty, so I recommend going light on it to avoid overpowering the smoked salmon.

Parmesan Corn Chowder

This was really good for not having any cream in it! It does need some seasonings though. I added some garlic, thyme, and a large pinch of cumin. I also added chopped red bell pepper and it gave it a nice bit of added flavor. This does make about 7 side-dish servings, but the serving size listed in the recipe surely isn't intending for this to be a main course of that size. We got about decent-sized bowls out of it.

Oatmeal Raisin Cookies IV

This is the most perfect Oatmeal Raisin recipe you will ever have. To make them less fattening, I have substituted "I can't believe it's not butter" baking sticks and egg beaters. They turn out perfectly chewy and delicious every time!

Jay's Signature Pizza Crust

This is a great recipe, but it makes twice as many pizzas as the recipe says. I usually make the full recipes and freeze the other half for another day. It freezes really well. If you want an amazing recipe, add 2 tablespoons of honey after the yeast activates. You'll need a little more flour to make up for the extra moisture, but the honey gives the dough a slightly sweet flavor that is to die for. I've also added garlic and/or italian seasoning with the flour and it turns out great as well!

White Chocolate Macadamia Nut Cookies IV

These are good, but way too many nuts for my taste. The large amount of macadamias make it so the dough doesn't spread much at all while cooking, which also makes it really difficult to tell if the cookies are done yet. If you like a soft, chewy cookie, I highly recommend using about half as many nuts in the recipe.

Zucchini Herb Casserole

This has some really good flavors and is a great base recipe. I added way more flavor by multiplying the garlic significantly, as well as a lot of fresh chopped basil. I also added shrimp, but it would be good with chicken as well. Also, double the rice.

Justin's Hoosier Daddy Chili

The flavor of this chili is great. In my opinion, the beans are necessary. I like use half pinto and half kidney. Also, there is WAY too much chicken broth in this recipe. I think it has to be a mistake. Use half the amount of chicken broth at the very most. I use even less than that. Otherwise, it becomes more of a broth that tastes like chili. This chili is great when garnished with sour cream, chives, lime wedges, and cilantro.

Zucchini Brownies

These were great for a "less unhealthy" dessert option. They definitely aren't a healthy option due to the sugar content, but a great option for getting more nutrients in. I subsituted applesauce for the oil, but followed the recipe other than that. I found the result to be more like a gooey cake than brownies. I think I'll puree the zucchini instead of shred it next time, as it did not fool the 9-year-old taster when she saw "the green stuff" after she got half way through the brownie (she had no idea before that though). The frosting is a must in my opinion, but you only need half of it. Overall, these don't necessarily taste just like wonderful brownies, but when I have a bumper crop of zucchini, I'll gladly make these instead.

Chococonut Chip Cookies

If I could give this 6 stars, I would. These are by far the best cookies I have ever made or tasted! I followed another reviewer's instructions of adding two tablespoons of milk and an extra 1/4 cup of butter to make them more fluffy. I didn't want flat cookies - I've had that problem a lot in the past. I also just threw everything into one bowl and mixed it all up at once. If you undercook these, they are still great. If you overcook them, they are still fantastic. They remind me of macaroons. I'm not sure if I will ever try another cookie recipe again.

PHILADELPHIA Smarter Fettuccine Alfredo

This was really good! I didn't use quite as much chicken broth as it called for because I wanted the sauce to be a little thicker and it turned out great. It definitely doesn't taste like the fatty, heavy kind of alfredo, but is pretty darn close and you feel a lot better about eating it. Adding smoked salmon to this was amazing!

Red Pepper-Salmon Pasta

This sauce is really good. I would recommend using the sauce in other pasta recipes as well. It overpowers the salmon a little, so if you are looking for a recipe to cook good salmon with, this is not it. Do make the sauce for something else though!!

Salmon Cakes II

These are awesome!! I used fresh cooked salmon, rather than canned, but didn't change anything else on the recipe. I used a sauce of one part dijon, one part lemon juice, and two parts mayo. YUM!!!

Mint Chocolate Chip Cookies

These are pretty good! Like another reviewer, I just used a basic chocolate chip cookie recipe as the base, instead of the cake mix. I also added a little more peppermint extract than listed, as well as a couple more drops of food coloring. I must say, I do prefer standard chocolate chip cookies more, but these are fun for the holidays.

Chicken Pot Pie IX

This is a really good recipe for basic Chicken Pot Pie. I added whatever additional veggies I had in the fridge (chopped up) and it was great! I also used leftover shredded chicken from a whole chicken I cooked a few days earlier.
