Banana Cream Pie V

This is a great tasting recipe, however, it can be frustrating to make if you haven't made a lot of cream pies. I have finally mastered it but have changed how to make it. More the procedure then the ingredients, Here are my tips and changes. Must be done in a double boiler, heat 2 C milk (whole) and 1 C 1/2/& 1/2 heat until almost scalding but do not scald. Take out 1 C of hot milk and add to your whipped till foamy eggs (3 not 4) mix together well, add milk and eggs back into milk, cook for 20 minutes. stirring occasionally (This breaks down the eggs to allow for thickening process) Mix 2/3 C sugar, 1/3 C cornstarch & 1/2 tsp salt (mix together well.) After the 20 minutes add cornstarch mixture and stir constantly for 2 minutes and whisk it into the milk and egg mixture. Cook for another 15 to 20 minutes for the pudding to become thick and a spoon should be able to stand up on it's own in the pan. Take off and add 2 tbsp. butter and 1/2 tsp vanilla. I will start doubling this recipe, its a lot of work for 1 pie. Allow to completely cool in the fridge with a cover on top so that the pudding won't have a skin. Put in a cooled pie shell.

Peach Salsa

I loved this, however, I did change it up a bit, I reduced the sugar to 2 2/3 C It is still plenty sweet. I omited the pears and added apples, I love adding aples to salsa is thickens the salsa. So I used 6 Peaches and 5 apples. I added 3 garlic pieces chopped and I did not use the pickling spice. My Family loves it and I bottled it and got 11 pints. Great with crackers and chips and to cook with. Wonderful to put a pint over a pork roast in the crock pot.

Chocolate Bundt Cake

I loved this recipe, I added one small package of chocolate pudding and I used buttermilk instead of milk just because I like the buttermilk richness. My family loved it and it is a new favorite!! I made a butter and cream cheese frosting and drizzled over it, it was great, i am going to try chocolate next time, but I think it can be served with or without frosting, or some bananas, strawbwerries, whip cream any way you want it, I cooked it for 70 min and it was done. It was moist for two days. WE ate it right out of the oven hot and it was wonderful.

Chicken Tortilla Soup I

i have a similar recipe to this and i caompared them, i did not make a lot of changes however one thing my other recipe had that this one did not was adding lime juice to it. it just really brings out the flavors in this soup.I also used 5 cups chicken broth and omitted the water, it worked great I think it is one of my familys favorite and whenever i take it in as a meal to someone they rave about it.
