Pumpkin Bread IV

Not sure what happened, but I scaled this back to 1 loaf and it turned out pretty sad. I used unsweetened applesauce in place of the oil, as I usually do for recipes. It baked for 45 minutes at 350 but then I had to lower the temp to 325 for another 30 minutes. It never cooked properly.

Mom's Zucchini Bread

Love, love, love this recipe!! So delicious and moist!! The only change I made was to substitute the oil for organic no sugar added cinnamon applesauce. Due to this change I had to cook it for 1 hour and 10 minutes. Perfection!! And another note, do not drain the zucchini. This is what makes the bread moist. Highly recommend this recipe.

Bourbon Spiced Pork with Sweet Potatoes and Apples

This was super easy and very tasty! I lowered the servings to 6 but followed the recipe to a T. Not too spicy and just the right amount of sweetness from the apples. I love sweet potates and roasting them is a great way to enjoy them. I would highly recommed this recipe to anyone.

Sweet Restaurant Slaw

Amazing!! I hate cole slaw but this recipe makes me want to eat it everyday! I used regular mayo, less sugar and celery seeds instead of poppy. I will be making this again and again.

Yummy Sweet Potato Casserole

This was absolutely amazing!!! I baked 5 large sweet potatos, used evaporated milk and cut down the sugar. Many people praised this dish and my husband who hates sweet potatos said this did not taste like sweet potatos. Yum, yum, yum!! I will be making this all year long. Highly recommend.

Baked Chicken Nuggets

Love, love, love this recipe! I use seasoned breadcrumbs instead of all the fresh herbs. My toddler would not eat it otherwise. Also, chicken tenders are easier than boneless breasts. I dip the chicken into milk, roll it in the breadcrumb/Parmesan cheese mix and then place it on a wire rack over my cookie pan. Works great and tastes delicious! I cook for 25 to 27 minutes.

Spicy Bean Salsa

Love this! I followed the recipe exactly. I found diced tomatoes with jalapeno peppers but I was worried it would not be enough spice, so I added a 4oz can of jalapenos on top of that - spicy! Next time I will drain the black-eyed peas to make this less soupy. I will definitely make this again.

Quick and Super Easy Chicken and Dumplings

Easy Fruit Cobbler

Made this with cherry pie filling. Added cinnamon and brown sugar to the top and vanilla to the mix. Everyone loved it! Very yummy! Will definitely make this again with other fruits.

Cheater Pot Pie

I cheated even further. Instead of putting the mixture into a pie, I spooned it over rice. I used 1 can cream of chicken and 1 can cream of celery. I added a little more milk, a small amount at a time, until the mixture thinned out a little bit. I added biscuits on the side. Yummy!

Pumpkin Bundt Cake

Super moist & yummy! Based on other reviews I used Pumpkin Spice Jello instead of Butterscotch, used cinnamon applesauce in place of the oil and added additional cinnamon. Very good! I did not even add a glaze. I will definitely make this again.

Wow! Too rich and buttery tasting. I made this exactly as written but did add bacon, onion, garlic and used fresh mushrooms. Made me feel ill after eating. Too heavy. If I make this again I will follow other reviewers and make a lighter, healthier version.

3-Cheese Pasta Bake

This is a really great and easy dish. My family loves it and both my toddler and husband are picky eaters. I make my recipe with the cheesy soup. I haven't added anything addition but this is an easy recipe to add diced chicken, ham or turkey with some veggies.

Spinach and Orzo Salad

This makes a ton of salad! I made it for a dinner party of 4 and thought I would have a little left over for lunches but there was way too much left over. Next time I will cut the recipe down. I also did not have pine nuts because they were too expensive. I used walnuts instead. I only had a 5oz package of baby spinach but I thought it was a good amount. This was a good recipe and I will make it again but next time I am going to add more feta. This is a good summer salad.

Soft Oatmeal Cookies

Good recipe. Added 1 cup raisins. Did not chill and did not flatten. After mixing the dough I immediately scooped in heaps on the baking sheet and baked for 8 minutes. Yummy!
