Oh, wow. Yum. Following some suggestions, I did the following: used mostly olive oil instead of butter, used a can of crushed tomatoes instead of water, and I used founder instead of cod. I put in the clams first, and after they started to open, put in everything else, lastly the fish that I had cut into bite size pieces. I cut everything in about 1/2, and it was perfect for 5 people. Finally, can't say enough about fresh ingredients, everything was fresh and wonderful.

Roasted Beets and Sauteed Beet Greens

This recipe has me hooked on beets! The beets need nothing. For the greens, I add a bit of lemon or white wine while wilting them. A crowd pleaser, and a recipe that will turn the most skeptical beet hater into a lover!

Sweet Potato Gnocchi

Great recipe! I used the suggestions of previous reviewers and changed a few things. I used butternut squash instead of potato, and mixed it all together in a ziplock bag. Once I got a good consistency to the dough, I cut a hole in the corner, and used it like an icing bag to make the shape. Delish with a little balsamic vinegar

Angel's Pasta

Very good, very easy. I used bowtie pasta, easier to eat with the veggies. I chunked up the zucchini, added onions, and a little red pepper, and a little balsamic. Overall, very simple, very quick, yummy.

Baked Shells in Sauce

Very good, a nice way to use silken tofu. Definitely all about the sauce. I added garlic and green pepper. I wish I would have Pam-ed the dish before baking for easier cleanup.

Hot and Sour Chinese Eggplant

Cindy's Pumpkin Pie

Great pie. Everyone loved it and I'll be making it again soon. Some changes I made: warm the ice cream, 1.25 teaspoon cinnamon, 0.5 teaspoon ginger, 0.5 teaspoon nutmeg, 0.5 teaspoon allspice, 3 tablespoons scotch. I also cooked it for more like 55 minutes

Italian Kale

I was looking for some inspiration for what to do with kale, and I found it! I didn't exactly follow the recipe, but used it as a start. Before doing anything with the kale, I sauteed some sweet potatoes, mushrooms, and onion (cut into bite size pieces) with garlic. I added the kale, following instructions loosely, plus some crushed red pepper. Not exactly the recipe, but yum!

Garbanzos with Fennel

Yum. Very tasty. I didn't follow the exact portions, and it turned out really easy. I used canned chick peas and tomatoes, and leeks instead of onion. Also served with a scoop of rice in the bowl.

Kale Puttanesca

Yummy. I didn't measure but essentially followed the recipe. At the ended it was missing something so I added a little basalmic vinegar and a couple of tablespoons of pasta water to help it coat. Delish. Wishing I had made more

Spicy Bok Choy in Garlic Sauce

This was ok. I follwed the recipe pretty closely, but found the bok choy got very watery once I removed it from heat and let it set. When I added the sauce, it didn't cling to the bok choy, leaving the veggie pretty flavorless. It was an ok preperation, but I won't do it again.
