Apple Pie Muffins

I get major compliments on these muffins whenever I make them. I think I use more apples than it calls for. This last time I had almost a whole bag that was going bad and chopped them up in the food processor and threw them all in there. So good!!

Strawberry Orange Rhubarb Cake

Golden Rum Cake

Perfect and easy. Loved it!! Also used less (a little more than 1/4 cup) rum and a little more butter in the glaze. Will definitely make again... probably for New Years!

The Best Rolled Sugar Cookies

Wonderful. Easy to work with and tastes great! I ended up using my hands to mix in the last couple cups of the flour mixture. Took about 5 minutes to cook so they do go fast. Looking forward to decorating them!

Easy Swedish Apple Pie

I think this recipe would have been perfect if I wouldn't have put a full teaspoon of almond extract in per other review. It was over powering to me. Next time, I'll put maybe a 1/4 teaspoon in. I will definitely make it again!

Sparkling Holiday Jam

I am so proud of myself (first time making jam). This turned out perfectly for me. I used 10 cups of frozen strawberries, which I thawed a little and chopped up in the processor. I used one bag of fresh cranberries which I also chopped up. I used about 2 cups less than a 5 lb bag of sugar and tried to put the right amount of pectin in - one full packet of 1.75oz and little more of another. This recipe will fill more than 12 8oz jars!! I had only prepared 12 and we have a good sized container's worth left over. The jars turned out great!!

Raspberry and Almond Shortbread Thumbprints

I can't say these really turned out for me. Even when I froze the prepared cookie sheets for 15 minutes, they still turned out pretty flat. They tasted pretty good. Too bad I can't put them on the cookie tray because of how they look... at least it's an easy recipe!

Chocolate Crinkles II

These look great. They were perfectly crinkled and puffy for me. I can taste the unsweetened chocolate, so personally I would like them a bit sweeter I guess. Maybe next time I'll add chocolate chips. 12 minutes seemed perfect for my oven.

Marbled Almond Roca

Wow! I decided to make half a batch because I had some sliced almonds left over from Halloween and wanted to give my mom a little something extra for Christmas. I don't like nuts, so didn't think I'd really like it (never had Roca before), but I tried it and it is sooo good. So good that I had to make another, full batch!! I think it's excellent with the sliced almonds (vs. slivered). Just know that the mixture will start to brown before it reaches the correct temp. In order to make the chocolate look swirly, I put the chocolate chips on first and spread them around and then put the white chips on top of that and let them sit for a little bit and then spread those around. I also used a pizza cutter to basically score the break lines on, let it harden in the fridge and then broke it into nice, square pieces. I'm giving this and the Irish Cream II from this site as gifts. People will love me!

Irish Cream Liqueur II

I think this tastes great - It's been in the fridge for 2 weeks and I've been shaking it up a couple times a week because I noticed all the chocolate at the bottom of the bottles. I also noticed that there are little chunks of chocolate in the drink itself, so when it comes time to give (if there's any left), I'll probably strain it out... I might try chocolate syrup next time. I just wish I would've made more!!

Cranberry Orange Cookies

These are sooo good! I'm worried they won't last until the holidays! I did add about 1/4 tsp of almond extract. Chopped fresh cranberries in the food processor; cooked for 13 minutes at 350. They are delicious without the frosting/glaze, but they don't look that pretty. Therefore, I did the glaze - used 1 cup confectioner's sugar, put it in plastic baggie and snipped a corner. They look great! Waiting for the glaze to set and I plan on freezing them until the holidays.

Peanut Butter Kiss Cookies

I have been making these without the kisses - as PB cookies since I was a kid. I've been adding the kisses to them for Christmas for many years. They are one cookie that'll always be on my list for Christmas. I roll them into balls and coat them in sugar before baking.

Yummy Artichoke Dip

This was really good... I cut the recipe in half because it was just two of us. I still probably used a good 7oz of artichokes anyway - chopped up in the food processor. I used a little less than 1/2 cup of mayo because I don't like a lot of mayo flavor. I used shredded Parmesan cheese instead of grated and no chile peppers. I did throw some chili powder in tho. It was really, really good!!

Marinated Pork Tenderloin

This meal got rave reviews from everyone. I used onion powder instead of minced onions (didn't have any) and used about a tablespoon of minced garlic instead of garlic powder (love garlic). I let it marinate for about 20 hours - mmm, the marinade smelled sooo good!! I also cooked it a good 50 minutes to an hour because I don't have a meat thermometer and I get kind of paranoid. I warmed up the leftover juice on the stove with added cornstarch - wonderful gravy! Will make again.

All-Day Apple Butter

I thought this recipe was great. I also used less sugar - about 2 cups, one cup brown and one cup white. I cooked on high for one hour, overnight on low (12 hours), I then threw the mixture in my blender and put back in the crockpot, still on low, for another 8 hours (it seems to keep separating when I did the saucer test). New to canning, I had no idea what I was doing, and the instructions that came with the jars was talking about using a processor - which I don't have. I finally found the video: Tips for Water Bath Canning for Dummies on YouTube. Of course, I watched it after I started the canning process. I look forward to making it again - with the canning knowledge I have now. The recipe though - great!!

Perfect for a cold day - incredibly easy. Love this recipe!! - I only use one can of biscuits - also chicken broth if I have it instead of water. I also sprinkle some paprika on them.

Chocolate Mice

The mice tasted pretty good... kind of a lot of work for not much to show for it. I got 16 mice out of this recipe... didn't put any eyes on them. Very messy to shape. Got compliments, but probably won't make again.
