Big Al's K.C. Bar-B-Q Sauce

Reviewed: May 9, 2011
i've made this sauce a few times and it is great. its one of the best bbq sauces i've ever had. there have been times that i didn't have enough red wine vinegar so i also used some apple cider vinegar, i really like the flavor the apple cider vinegar adds. this sauce also keeps well in the fridge so make the whole batch.

Lentil Soup

Reviewed: Oct. 17, 2009
i made this tonight and feel like it MUST get all 5 stars, especially with the help of some reviewers!! my big change was that i added mild italian sausage - i cooked the sausage in the pot and then pulled it all out and left just the grease and cooked the carrots, celery and onion in it - i also used 4C chicken stock and 2 C water and a full 28 oz can of crushed tomatoes (and then threw the sausage back in) and added about 8 small potatoes as well. i cooked this down for about an hour and a half. i used balsamic vinegar at the end as well -- i know i made a lot of changes (most from other review suggestions) but they are WELL worth it... i will make this all winter!!

Aegean Chicken Salad

Reviewed: Aug. 17, 2009
this is a great chicken salad, my husband and i loved it! i did make a couple little changes - i used 3 chicken breast and diced it up because i don't buy canned chicken.. i left out the bell peppers because i hate them and added some red seedless grapes and a few capers for extra flavor.. its a matter of preference, but we loved it!

Charley's Slow Cooker Mexican Style Meat

Reviewed: Jun. 16, 2009
this was so tasty! my husband accidentally bought beef brisket so i wasn't sure it was going to be as good, but it really was! we added more cumin and made sure to shred it and let it cook another hour before serving - the whole house smelled good and i froze the leftovers!

Homemade Black Bean Veggie Burgers

Reviewed: Jun. 15, 2009
these were great - my husband and i both loved them. i did make a couple changes. i used 2 cans of blackbeans and 1/2 can of sweet corn - i added the corn after mashing the beans. i also added some diced chiles instead of the green peppers because we like spicier food. i omitted the breadcrumbs and used oatmeal in its place. I also added a bit of fresh cilantro to the mix and served them on a bed of cabbage with a chipolte sauce. they were SOOO good -

Slow Cooker Beef Stroganoff I

Reviewed: Jan. 20, 2009
This is a great recipe, but read some of the reviews and made some modifications - I used extra beef stock as well as some sauteed mushrooms. At the end of the cooking I also added some sour cream as a couple people suggested. It really needs another 20 minutes after adding the sour cream to let the flavors come together. This was MUCH better as leftovers than the first time. I will let it cook a little longer after adding the sour cream the next time.

Grandma's Gingersnaps

Reviewed: Jan. 20, 2009
We made these over christmas (really my sister made them) and followed the recipe to the letter. They were by far the favorite cookie of the weekend. The cookies came out crisp and thin. My husband and my father both love gingersnaps and both agreed these were better than what we normally buy.

Flatlander Chili

Reviewed: Jan. 17, 2009
i have made this recipe for a few months now it has been a huge success. i did make a couple changes just due to personal preference. i add 2 cans of dark red kidney beans as well as 2 cans of diced tomatoes. i also add a jalapeno and half the seeds for more spice. i do not add the entire bottle of tomato juice in on most occasions - i found with the extra tomatoes it can make it too soupy - i let it cook for a while and then add only as needed. the last two times i have made this i used ground turkey and found that both my husband and i liked it better. this really is an easy recipe and it makes great leftovers and freezes well too.

Amish White Bread

Reviewed: Jan. 17, 2009
i just made this bread tonight and it was so good, and so easy! i followed the suggestions of some others and cut the sugar down. i also kneaded it in the kitchen aid and it made it so fast. i have never ever made bread before and so i was hesitant, but it came out great. i am planning to try it again and cut back further on the sugar and add some honey as well as some wheat flour. i would love to know if anyone has tried any other flours for this as well.

Artichoke & Spinach Dip Restaurant Style

Reviewed: Jan. 14, 2009
I have made this twice now and it was a hit both times. The only thing I changed was the amount of cheese and alfredo sauce. I threw the whole jar in and added more cheese. It was great and gone fast!

Barbecued Beef

Reviewed: Jan. 14, 2009
i made this yesterday for dinner and it was a hit. I cooked it for 10 hours in the slow cooker and then shredded the beef and cooked it another 40 minutes on low. The only thing that really made it a 4 out of 5 was the amount of grease. I had read about it in other reviews so i trimmed as much as i could, but it still had plenty when it was finished. I think i am going to try a pork loin the next time and see if it is better. I am also going to add a little red pepper or hot sauce for more of a kick.

Deep Dish Brownies

Reviewed: Dec. 2, 2008
this is a great brownie recipe and i don't really like chocolate. i took the advice of some reviews and used only 2 eggs. i also baked these in an 8x8 dish and they were a good size. they are rather rich so a little goes a long way. they are a super easy one bowl dessert.
