Picadillo

I was cruising All Recipes for something different to do with hamburger. Wow! At first my family was skeptical as they looked at the contents of their bowl, one bite and we are all Picadillo lovers now. Even made it for company only to find out that one of the guests was sensitive to spicy foods. She ate it without any problems - or indigestion after wards. I don't always have all of the ingredients on hand, but it is a very forgiving recipe and always tastes delicious.

Oven Pancakes

These have become a staple at my house. We have doubled, tripled and quadripled the recipe - the only thing to watch is that you really beat those eggs. We have nick-named these Papa's hat because when done in a round dish, it resembles a sombrero. We usually skip the lime juice.

Clone of a Cinnabon

Used this recipe exactly for a dutch oven cook-off and won first place with it. Everyone raves about these Cinnamon rolls. When I first made them, my husband was startled at how much cinnamon and brown sugar went on them - thought it was going to be too much. One taste and he said, "Don't change a thing."

Roasted Sweet Potatoes & Onions

Made this for company sans the amaretto as I didn't have any. They devoured it. Asked for the recipe. Made it again for a Hawaiian themed pot luck with coconut shrimp. Even the kids were devouring it not realizing those were onions!!

Bread Pudding II

My husband loves bread pudding. I have tried several recipes and never been too crazy about them. Then, one church potluck I stumbled upon this recipe. It is true comfort food. I have made it exactly to the recipe, just altering to bread on hand and it always turns out great. I even have an older gentleman with Parkinson's who asked me for the recipe and now eats it weekly. Think of it- it has lots of nourishment!
