Hot Tamale Pie

This is really good! The whole family loved it. I like that you can hide veggies in here. The mixture of tangy from the chiles combined with the sweetness of the cornbread was very good.

Slow Cooker Chile Verde

I get so tired of reading snarky reviews on this site because a recipe isn't "AUTHENTIC." I, too, prefer green chile from scratch where I roast the chiles myself. But I don't always have time for that, and often need to put a quick, healthy dinner together that the whole family will eat. So I'm grateful when other folks put recipes on here with some shortcuts that make my life easier. Now the review part... this is a delicious, easy recipe. It's good over rice, on breakfast tacos, burritos, or with quesadillas. I left out the jalepenos because I have young children. The green salsa still gave the chile plenty of heat. I added 1 tsp. of cumin, 1/4 tsp. of white pepper, and 2 TBSP. of lime juice (I use those in my from scratch recipe). This recipe works well with chicken if you don't have pork on hand (and, yes, I know the chicken isn't "AUTHENTIC." chile verde). Happy cooking!

Simple Slow Cooker Meatloaf

I was really skeptical about meatloaf in the crock pot, but this was great!. It turned out much more moist and evenly cooked than when I cook meatloaf in the oven. The whole family went back for seconds. I put the meatloaf directly on the bottom of the slow cooker, and after reading some of the reviews, drained the drippings out of the bottom after 4 hours. I used 2 pounds of 90% lean ground beef, and barbecue sauce instead of ketchup (simply because that was what I had on hand). Turned out great. Also... I have one of the newer crock pots (that in my opinion cook WAY too hot). After 4 hours, I checked the meatloaf temp. It was over 165, so I turned it from low to warm until I was ready to serve.

Slow Cooker Chicken Stroganoff

When the whole family raves about a recipe, I give it 5 stars. Everyone went back for seconds, 3 year old told me it was delicious, and my son asked for the leftovers in his lunch this morning. Extra points for being a very easy recipe with only 4 ingredients. Will definitely make this again.

Melt-in-Your-Mouth Pecan Rolls

Easy and very good! Much easier than dough from scratch, and I think it tastes better. I substituted maple syrup for the corn syrup. Family all asked for seconds.

Restaurant-Style Hashbrown Casserole

This recipe is easy and delicious. It's a very good base recipe that tolerates additional ingredients very well. I've added browned crumbled sausage, diced green chiles, and diced red peppers. I used cream of mushroom soup (personal preference). This recipe makes a lot, and reheats very well the next day. Thanks for sharing!

Italian Vegetarian Patties

I was really surprised how good these tasted, given the ingredients. I used a 17 bean and lentil mix, simply because it's what I had on hand. I also used Italian Seasoning instead of the basil (personal preference). Worked great. They are very flavorful and firm. They taste great alone, or on a sandwich. They also taste good hot or cold. I did read one review where she said the texture was like mashed potatoes. I did notice that the ones that were more well done on the outside had a firmer, meatier texture on the inside. So I think you have to make sure they're fully cooked through to get the firmer texture. It is a little labor intensive, but I think most veggie burger recipes are. Hubby and kids came back for seconds!

Salsa Chicken

Delicious, easy and healthy. Hubby and kiddos asked for seconds. I like my chicken marinated, so the second time I made it I marinated it in olive oil, lime juice and cilantro. Then cooked as instructed. Yum!

Chicken Enchiladas

Easy recipe - especially if you have chicken or turkey pre-cooked. Good flavor and the kids liked it. I tried cooking it for a shorter period of time at a higher temperature b/c I was tight on time. Don't... it made the bottom of the tortillas hard. I'll make this again, but stick to the instructions next time.

Orange Party Cake I

I'm a pretty good cook, but my baking skills are remedial at best. I was looking for an easy good cake, and this delivered! This is a lightweigt, fluffy, yet very moist cake that was very easy to make. I used chocolate cake mix with the orange gelatin, simply becuase I like the taste of chocolate and orange together. Next time, I might use orange extract in place of the vanilla to intensify the orange flavor, but that's just personal preference. Great recipe... Thanks!

Slow Cooker Oatmeal

This is a nice easy recipe good for busy mornings. I bought one of the new crockpots about a year ago. It tends to run hotter than I'd like, so I cook this recipe on the warm (not low) setting. When I tried it on low, it came out too mushy. If you like your oatmeal on the thick side, try using only 2 cups of water.

Chicken Tortilla Soup V

Very tasty for as easy as it is. I just threw everything into a crockpot (including frozen chicken breast) and shredded the chicken after cooking for several hours. I added 1 tsp. dried oregano and 1 tsp. dried cilantro for good measure. Very yummy!

Grilled Filet Mignon with Gorgonzola Cream Sauce

FABULOUS!!! I hardly ever cook steak because I'm not very good at it. The steak was delicious and tender. The cream sauce was absolutely decadent. Great dish for company.

Aw-some Coleslaw

Great recipe! I make a batch of this once a week to have on hand as an easy side dish. I used 1.5 tsp. of stevia extract in place of the sugar (we're trying to control sugar intake in our house). I also used a bag of pre-assembled cole slaw veggie mix, which worked just fine. We did eat it right out of the bowl, and it was fine, but it was much better the next day.

Excellent!! Easy and the whole family went back for seconds. The recipe makes a ton. For my family of 4, I divide the recipe in half and freeze for a later date. Freezes very well. I also mix the pasta with the meat sauce to simplify the layering process.
